so when you say disconnect and let sit at 30 psi, I assume you mean that you are filling the head space at 30 psi, then disconnecting, then letting it sit? I'm just trying to clarify what you mean by "3 hour rest at 30 psi" but also disconnected.

I brewed a gluten-free beer today. It was supposed to be inspired by Shock Top. The original recipe is here. I only used 6lb Sorghum syrup but added a pound of rice extract. It smelled really nice.

Going to be kegging a sour brewed with Bug County. Got to fill those faucet holes I drilled in the collar.

Bottled my vienna pale ale - realised as I was filling the bottles that I forgot to dry hop it.

Tasted fantastic though and I did do a fairly respectable amount of late hopping so the aroma won't be too bad. Plus it means I have a spare 50g or so of nice slovenian cascade

Are you using the crock pot as a ghetto autoclave? No pressure component but still pretty creative.

No, using it as a warm water bath for the samples. It's not in the picture, but I used a Johnson A419 and a thermowell with it to control the temp.

No beers until afterward. The pint glass was actually (later) holding distilled water for rinsing the probe.

I'm preparing for next winter while there is still some chill in the air. I filled a recently dumped Balcones Rumble barrel with 4.6 gallons of a strong "wOOt-like stout for some additional character (~6 weeks in the barrel and then at least 6 months more aging).

I'm brewing a barley-wine today to be ready in 8 weeks for some barrel treatment too.

I can't see the image on the preview so apologies in advance. I'll figure it out.

I have been thinking of doing a pils with mandarina. Use a lot, I didn't get much from mandarina in a pale ale.
