New (to me) hops

    I'm looking for some advice on building a heavy-handed AIPA. I'm not worried about style as much as I am at exploring a little more with some new hops I've picked up. I'll be looking to use about 10-12 oz in this recipe.

    I'm new to:
    Equinox
    Mosaic
    Galaxy
    Citra

    I'm not opposed to using additional hops not listed.

    ~14# Am 2 row
    1# Vienna (I'm actually out of Munich)
    .5# Crystal 40
    .5# Carapils
    1 pound table sugar (at high krausen)
    Mash at 154F for 60. Single infusion, double batch sparge

    Warrior@ 90 for roughly 65 IBU

    Exploratory hops @ 10, 5, KO for a 20 min hop stand.
    Dry hop with 2-3 oz of exploratory hops.

    US-05 in the mid 60s until complete.

    What's good?

    Pretty much all of it. Mosaic, Galaxy and Citra are my favorite hops. They are all pretty fruity and I do sometimes pair these hops with a small amount of CTZ or Simcoe to bring a little dankness back to the party.

    They're all good. Of the ones you picked, I like Citra the best and Mosaic the least. But if you like crazy hops, those are.

    I enjoy citra and mosaic as late addition and dry hops while utilizing chinook or Columbus to bring pine and dank to the party. Citra and Galaxy come across almost sweet like overly ripe fruit, so I need the other cultivars to bring balance.

    Citra for any of the exploratory hop pings.
    Galexy for boil additions, not a fan when dry hopping.
    Equinox 5 FO And dry hop.
    Dislike mosaic so much I gave away a half lb.

    Mosaic seems to be incredibly divisive. Maybe that goes along with people who taste garlic and onions in new school hops and those that don't? It's one of my favorite hops.

    I have brewed IPAs that were solely hopped with all of these hops and I enjoyed every one of those batches. Some quick impressions:
    • Citra IPA: IMO Citra hops are the most potent hops I have ever brewed with. I actually 'aged' that beer a bit before I could enjoy drinking it. For my palate that hop is dominated by tropical fruit aroma/flavor. Some folks who drank this beer perceived cat pee.
    • Mosaic IPA: That beer had dominant aroma/flavor of berry fruits to my palate. In the past few months I had a couple of commercial SMASH Mosaic beers where dank was the prominent aroma/flavor
    • Galaxy IPA: I really liked that batch. Lots of complex tropical fruit flavors in that beer.
    • Equinox IPA: Wow!! That beer was awesome.

    Ha…I completely dislike Galaxy in boil and will only dry hop with it (Lost Nation Galaxy was a drain pour for me). And Mosaic is my favorite in the mix. So when are we meeting up for a beer to discuss how wrong you are? :wink:

    I have an IPA recipe that uses Citra, Mosaic and Falconers Flight for the flavor/ aroma hops.
    I ususally use my homegrown Newport for bittering, but I didn't get much of a crop last year, so this next batch (scheduled for early May) will use something else, maybe Magnum or Warrior. I will do an ounce of each at 10, 5 and FO, plus another ounce as dryhop.
    so, IMO, any mix should be interesting...how much of each do you have?
    Personally, though, I would go a couple degrees lower on the mash, maybe target 152... Getting closer to mid 150s gets a bit sweeter than I normally prefer for an IPA / IIPA.
    Something else to consider may be doing a SMaSH with each of those hops to see what comes out. Go with a Pale Ale grist, maybe 12-ish lbs pale malt, and hop burst - do everything later, maybe 10, 5 FO...it would be interesting to have them side by side, where the only difference is the hops...

    I've got a pound of each, for better or worse. I didn't post that above because I shouldn't need more than any of that for experimenting. <---Famous last words. I keep a high mash temp and a little extra crystal in hop forward beers until I really know what I'm working with. They tend to treat me better after the hop juice, (late/DH additions), wears off after 3 months. Just a personal preference, and I appreciate not getting nabbed by the crystal police yet.

    Of all of those on your list, Equinox is the only one I have not personally brewed with. Based on JackHorzempa's post, I will seek it out.

    But of those others, I like all of them, and my most recent brew used equal proportions of Galaxy, Mosiac and Amarillo (Citra was out of stock) for the flavor/aroma additions. I got a lot of grapefruit in the aroma, and a nice, juicy flavor from the dregs out of the bottling bucket. I am looking forward to when it's carbed up.

    If you brew an Equinox beer please share your thoughts with me. Hop aroma/flavor can be a challenging topic since we all have unique palates and we will perceive aromas/flavors differently. My wife (who is a rapid hop head) enjoyed my Equinox IPA but she was not as enthusiastic about the beer as I was (and a friend Kevin).

    Citra is one of my favorites right now. Two new (to me) hops I recently picked up are Huell Melon and Mandarina Bavaria. Looking forward to trying those out.

    Like everyone else said, all those hops are great and they all deserve a single hop beer, at least until you get to know them. Also, if you think two might be good together, you can always blend in the glass.

    I've done Citra, Nelson, and Equinox. Really nice beer.

    I haven't solely used Equinox but plan on doing an APA with all Equinox. Amazing smell on Equinox pellets.

    Will do! I don't know if I will try it solo or as a blend, but it is on my list for this year.
