What is your favorite adjunct in a Barrel Aged stout?

  3. Chocolate/ Cocoa

    Just curious what is everyone's favorite adjunct for a Barrel Aged Stout?

    can you clarify what falls into the adjunct category? and what makes it a flavor vs an adjunct? genuinely curious

    Adjuncts are a source of fermentables other than malt- corn, rice, oats, unmalted barley. Some people also include sugars such as invert or candi sugars. It is the mash that is being 'adjuncted'.
    Just tell me who started it, and why won't it die already?!!! :grinning:

    Not really your fault- it's actually taken on a life of its own at this point (which sort of explains the frustration, which is more broadly directed).

    I'm with you there, but am considering changing it to 'Other' and writing in 'hops'. Then I'd really be out there on my own.:wink:

    I personally love fruited BA stouts and wish more places would do them. Backyard rye, the love below, Life is like, Lindley Park, Regal Rye (to a lesser extent IMO) are all so interesting and so good. I enjoy the sweetness with the simultaneous tartnesss fruit can provide, mix that with a barrel, and these are some of my favorite beers. If anyone has any suggestions of other Fruited BA stouts that are on this level, I would love to hear them.

    Berries are fermentable. Doesn't that make them an adjunct?

    You could probably make that case on a technicality, but that's not really why they are used.

    Coffee. Its essential for that extra bit of balance.

    Pretty much all the rest of the listed flavors can be simulated through proper malting and fermentation.
