    Pulled a sample of my 20-month old Apricot/Peach/Mango/Nectarine/Noyaux lambic. Possibly my favorite fruited lambic so far, judging by this sample. Will bottle soon.

    Thanks! I'm excited for the final product. Sorachi Ace has had me hooked on saisons since I first had it. It's hard to find around here so I'm looking to get my fix however I can.

    5 gal half pils half wheat kettle sour, split into 2 batches ... 1.056 SG

    1. On Left - Kettle Sour + French Saison Yeast 3711 down to 1.006 after 2 weeks, dry hopped with Citra and poured 4 lb apricot puree into the carboy
    2. On Right - Kettle Sour + Brett Brux 5112 + 1/4 cup built up lambic dregs slurry - riding a nice bubbly pellicle on top and smelling much like a lambic

    I recently Kegged up an Oberon Clone I came up with. Made a yeast start from 6 bottle dregs of Oberon 2016. saved and washed again now fermenting an IIPA with the same culture. Used Citra/ Falconer's Flight/ Columbus /Centennial hops. I too have high hopes for this one.

    How did the Oberon come out? I have been thinking about a hefe, but that is a damn good beer.

    It's very good, I used US Hallertauer hops and bitter orange peel. Grist was 45% US pale 2row 45% American red wheat 5% caravienne & 5% Carapils. Hop Schedule: 2oz @ 60, 1 oz @ 30, 1/2 oz @ 10 & 1/2oz @ 5... whirlfloc @15 and Bitter Orange peel @ 5. Mash @ 152f with approx. 7 gallons sparge with 6 gallons @ 172f collect approx. 11 gallons with a pre boil of 1.045 OG.

    Put a soured English Barleywine on gas last night. I soured in the keg, and decided not to transfer to another keg. Hopefully, that doesn't turn out to be a mistake.

    Racked IRS and added heavy toast oak, nibs and 1 oz vanilla. Add 1 more lb of auger to the@stealth style IRS. Fermenting slow, but I am at this time unable to add O2 so I think that's the reason. 1 more week then bring on the oak nibs, then the big freeze. Bottling IPA tommorrow

    Made a starter for wlp550 and wlp565 for my strawberry beer! Turned out pretty awesome and 5 gallons wasn't quite enough. Also, got my 2 Inkbirds itc-308 in the mail!!

    Made a mini starter for Dupont dregs. Tomorrow they will rub shoulders with 3711 in a big starter. Jarrylo and Ahtanum will be the hops.

    What was your abv for a Dubbel. Just bottled a Quad that finished at 9.98% and it blew fire out my nose. Probably won't make it again.

    Brewed up an Imperial Macaroon Milk Stout tonight. 1.096 OG, fermentation started within an hour of pitching the yeast. Intense already. Will keg with toasted coconut and hazelnut. Secondary will get a bunch of cacao nibs for a few weeks before kegging.

    Currently in the 2-hr boil for my biggest beer yet! Pre-boil gravity is at 1.086, target is just shy of 1.12 post-boil. Should end up around 12-13% ABV.

    It's a Bourbon Vanilla Rye Imperial Stout. Malt bill includes 2-row, dark munich, roast barley, flaked rye, chocolate rye, 20/60/120 crystal malts, victory and carafa special III. Black patent used for sparge only to ensure total blackness (~60 SRM). Pitching 2-rehydrated packets of US-05. Pure O2 of course for a few minutes for a nice healthy ferment, hopefully!

    After primary is complete and I hit my FG, I will be adding my tincture of bourbon and vanilla beans, as well as the 3oz of bourbon soaked medium char (may char it more...) for about a week. Will transfer to the keg for long-term aging. Expecting to tap it in a few months, maybe around september. So far, brew day has been easy as can be... A bit difficult to stir that mash though, with 24lb grain at a 1.1:1 ratio. lol

    Can't wait to see how this turns out! My biggest beer up until this point was 7.8% DIPA.

    That sounds pretty crazy, might even be delicious.

    How about you work on that Scoflaw beer you mentioned a while back? That comment introduced me to one of my favorite cocktails, so thanks. :slight_smile:

    I just kegged a mandarina Columbus citra simcoe IPA because my refractometer was reading 7 Brix for the past 3 days. I took a hydro sample after kegging and it was at 1.012. What's up with this? The refractometer reads 0 with my tap water... Just a crappy refractometer?

    It's on the to-do list! Probably brew it this summer soon. I want to do some white peach and guava gose first. Glad you dig the cocktail!

    National Homebrew Day. It was actually Tuesday May 3rd, but who can brew on a Tuesday unless you are in the business or retired? I'm neither (yet). Today it's my Dryland American Wheat Ale recipe with red wheat instead of white for the first time. Should give a little different color and a nuttier flavor. We'll know around the end of July. Still an extract brewer, but I plan to build a mash tun and do some all grain brewing in the fall.

    bottled a tripel the other day. used mangrove jacks new tripel yeast. the (green) beer smelled lovely - very fruity, apricot/peach/pear, and some citrus and herbal notes from, i guess, the mount hood hops (lovely hops indeed!). hopefully this will turn into a nice july beer. this year or next...
