    I don't see a thread yet for this month's activities. Yesterday I brewed up 2 worts. Wort #1 most resembles a Belgian pale ale and got split, with one half getting Brett C (WL) and another getting Brett L (WY). Wort #2 was a beefed up Berliner and was introduced to a Lacto starter (WY). It will be used as a blender. Today's brewing activities involve cleaning up. Hope you have a happy 4th of July (if you are in the US) and a good brewing month.

    Yesterday I cleaned the kegs and lines in my keezer and kegged an IPA. Experimenting with a different force carbing method out of curiosity and impatience (30 psi x 24 hours then serving pressure).
    Today I'm brewing an Oktoberfest with a big 2206 starter and lots of helpful advice from this forum.

    In Denver doing research until the 6th enjoying as much as safely possible. Epic and Cerebral today, Red Rocks tonight then, possibly back into town for the fireworks show. Planning Dry Dock, Comrade, Former future, and Hops and Pie Tuesday.

    I have an IPL left at home cleaning up and my Fantôme of the Hopra carbonating.

    Just kegged my first 10 gallon batch (ok.. maybe 9.25 gallons.. but still) Rocked the new brewstand, and the modified LME drum fermenter worked pretty well. Transfer to kegs via CO2 worked well enough, but I think I will need to make a few more minor adjustments for ease of use. Been a fun project.

    Dry dock has been hit or miss since losing their head brewer.

    i was there 2 years ago and the beers were good. musta beena hit.

    Yeah, my favorite beers from them have been altered. It may be worth going there still @scurvy311 but as a guy who has been going there for years I find the changes are not positive.

    Brewed a white stout yesterday. Had a 6 hour brew day, including clean-up. I hadn't brewed in almost 3 months!!! It was definitely nice to get back in the groove. I forgot to take a picture before the beer went into the fermenter, so this will have to do. I hydrated a pack of US-04 and fermentation was underway this morning when I woke up. I'd say, everything went well even after not brewing for a while! OG came in at 1.054! Cacao nibs and vanilla bean additions to come at kegging time, along with some coffee.

    Yesterday brewed my Citra/Galaxy pale ale for the third time in the past year. One of my favorite beers to brew and drink. Smooth brew day, OG right on at 1.056, started fermenting within a few hours, aggressively fermenting this morning. Also sampled my jalapeño peach wheat ale this weekend now that it finished carbing up and that turned out better than expected, although certainly not my favorite style. Last night also cracked open the first bottle of my bourbon barrel quad that was brewed early in the year. That one's a keeper.

    Do you get a good balance of citra and galaxy? In the Averagely Perfect NEIPA threads, there was some debate about citra over-powering galaxy. Wondering if you have some thoughts on that...?

    I use them in a 60/40 Citra/Galaxy ratio for this brew. This includes 4 oz of Citra and 3 oz of Galaxy post-boil between FO, HopRocket and DH. Citra is still the dominant player, but I definitely get a bit of the fruity flavor Galaxy brings. It has a different character, especially in the nose, compared to something like Zombie Dust or PseudoSue, which are 100% Citra. I actually did a side by side with fresh PseudoSue last year.

    Just finished put a tripel into the fermentation chamber earlier today. An excellent brew day that was only 5 hours long and included hitting every temp and gravity reading dead on. If only every brew day would go that smoothly...
