'fruity, spicy, herbal, floral'... an amber would be good. A simple SMaSH pale ale would be my suggestion though. How much wet hops of Willamette do you have?

2 bines' worth. probably 6 gallons.
tried a pale ale last year. didn't dig the results.
might go with an amber (which i've never made) or a porter (might work with chocolate)

that was another thought. totally not my typical style and recipe-wise, no clue where to begin.

Any sort of English pale/amber ale would be my choice.

I recently did an excellent rye pale ale with Willamette that was intended to be a Bell's Smitten clone.

25% malted rye, 10% light Munich, 65% 2 row. Cascade and Willamette at 60, 15, 5, flameout, and dry hop in equal proportion for 40 IBUs.

I use wilamette in browns porters and stouts. Did a surly bender clone utilizing them and enjoyed the results after it sat for a couple months in the bottle.

I've used Wilamette in porters, stouts and one time in a burton ale with tettnang which was super.
