We have and we are weighing our options. We spend a lot of time researching possibilities before we jump into anything.

We are trying to figure out a system that makes sense for out-of-towners, for our local supporters and for us as we dont have a ton of employees to help with this project...

If we can make it work, we might try one.

    Cheers,

The Rare Barrel style appears to work pretty well IMO

I think what side project does now works really well...bottles sell out immediately if they want them too. Not sure they need a society, but Id love to throw my hat in the ring for one if they do. While I'm sure rare barrel is good quality, I can't image its side project quality

Fantastic time at the cellar this eve. Unlabeled blend #3 was incredible.

I've been lucky enough to visit and purchase bottles from both RB and SP. If you enjoy barrel aged sours you should definitely give The Rare Barrel a try. Assumption of higher quality could come from the larger following SP has, which also has to do with how successful Perennial is.. oh and how SP keeps Deriving those BA stouts :grinning:

I come and visit you about 3-4 times a year. I would be more then willing to relocate to help get this project off the ground!

The unlabeled beers are "experiments", but #3 is something that I would love to recreate!

Question: Is there any timing or predictability to whats available for on site consumption?

I will be driving through stl for the holidays and wonder what my shots are at trying derivation 6. I'm working on tasting all top 250 and that is one of my 3 remaining to go. (Still need D6, Keene Idea, and Last Buffalo). Im more than willing to bring fun things to share if that makes this happen (saw a guy do a full derivation vertical). Sorry if this is off topic.

As far as I know, D6 was on-site only. Since it is no longer listed on their website as available, you're probably out of luck. Seems like it has been gone for a while but I couldn't say when they ran out. If you check http://www.thesideprojectcellar.com/, it will always tell you what is available for draft/bottles on-site and bottles to go.
