Need advice with a recipe.

    Hello!

    First off I like to say hello to everyone as I am new here and new to home brewing. I have done a couple of extract kits from NB, but I would like to try and create my own recipe. I would love any input and would be open minded to suggestions. I am trying to brew a super hoppy ipa on the lower end of the abv, but not a session. I love really hoppy beer with the strong aroma and flavor. If anyone has had any brews from Single Cut, they have a low abv ipa called Billy 18watt that is amazing. That's the style I like. I will list my ingredients and schedule. What is your recommendations for the amount of starting water for the boil? should I do a partial boil or full boil?

    0.75 lbs Briess Caramel 20
    7.5lbs Muntons Extra Light Dried Malt Extract
    1oz Apollo FWH
    1oz Cascade (20 min)
    .5oz Apollo (20min)
    .5oz Apollo (5min)
    1oz Cascades (5min0
    1oz Mosaic (flameout)
    .5 Apollo (flameout)
    1.5oz Cascades (7days dry hop)
    1.5oz Simcoe (5 days dry hop)
    Wyeast 1056 (will make a starter)
    Distilled Water
    Estimate original gravity of 1.062
    IBU's 103.3
    Final Gravity 1.015

    If your using distilled water for the beer, you will need to learn about water chemistry and make additions. That's the end of my water chem smarts.
    The rest of the recipe looks fine. I usually dry hop for no more than 5 days but 7 may be fine.

    The thing to remember when making yer own recipes is to keep records on what you used, how you used it ans what was good or bad. Looking over the recipe page will give you more ideas.

    Using distilled water is OK for extract brewing. The water minerals are 'in' the extract.

    I have never brewed with that specific mix of hops but your overall recipe looks fine to me.

    I don't comprehend why you are using differing dry hop durations for Cascade vs. Simcoe but...

    I personally utilize a dry hop duration between 7 - 14 days in my homebrewing.

    from part of the original post, should I do a full boil or partial? I will be doing a 5 gallon batch. If you suggest partial, what should my starting amount of water be

    Do you own a wort chiller? If so, go for the full boil.

    I sounds like you are making an attempt to create a clone brew of a specific beer that you like. How certain are you of the types of hops used and the relative amounts, or is this an educated shot in the dark? To me, 99% of I like an IPA is the hop character from using hops that I like, and I'm disappointed if I don't nail the right combo. You're using hops that are very popular (although I don't have an opinion on the Apollo), so you should end up with something that is tasty. I hope your aim is good.

    Nope not trying to clone a specific beer. Just wanted to use hops that ive had in IPAs ive really liked. So I thought I would try mixing some of them together and see how it turns out. Worst case it doesn't turn out good and I get still get drunk :slight_smile:

    I also have never used DME before. The 2 kits I used had LME. For some reason the kits both had this malty taste to them and the hops were very very weak in them. So I figured I will brew the same exact way with my own recipe as I did with the kits, and if that excessive malty flavor is there still then I know it something I'm doing wrong in my brewing process. I did hit OG and final gravity with them. One was bottled and one was kegged

    Another question that I have is what specific notes should I log during the process that I could use to report with. That way if I make mistakes or need help with why something happened, it will be easier for people to assist me?

    I have no idea what would be the correlation with "the hops were very weak" but I can report that LME goes stale more quickly than DME. I am reading your description of "had this malty taste to them" as meaning you were not too thrilled with the taste? If so, maybe the LME you used was non-fresh?

    yeah that could possibly be the issue. I am very picky about the beer I drink. I only like IPAs (very hoppy) Porters, Stouts, and very picky on Pale Ales they must be super hopped lol one of the best pale ales ive had was Peak Organic's Juice Bomb, but any other beer I don't like. I guess I am a snob?

    If it was me...and it's not, I'd only do a 30 min FWH (you'll need a bag) as Apollo is one of the most potent bittering hops known to man :slight_smile:

    ok, are you saying to use the bag to reduce the amount of oil released in the wort? also have you used Apollo? if so how did you like them? thanks for the tips

    True, although mineral additions may still be useful for influencing hop character. But for a relatively new brewer, I wouldn't consider it a high priority.

    I had a draft pint of this beer this past weekend and I really enjoyed this beer!! It was just a bit hazy (not murky/turbid/opaque) but it sure tasted like a 'NE' style hoppy beer to me; it had a nice 'juicy' quality and a nice soft mouthfeel.
    It sounds to me like you know what kinds of beers you like. One benefit of homebrewing is that you can make exactly the styles you like in the manner that you like.

    Sometimes when I speak to non-homebrewers I use the analogy of Chili (I assume that everybody has made Chili at least once in their lifetime). The benefit of making your own Chili is that you can make it just the way you like:
    • With meat or without meat
    • If meat: ground beer or beef cubes or some other meat besides beef
    • What ever beans you like (I prefer kidney beans)
    • What ever level of spicing you want: mild. medium hot, atomic hot
    • Whatever peppers you want (I use Cayenne pepper)
    • etc.
    Good luck making your beer exactly the way you want!!
