Dry, extract saison?

    Hey everyone! I've only done a few batches so far, all from one gallon kits. I've been lurking here for a pretty long time, and I have a copy of How to Brew (that I haven't really looked at in months). Anyway, Google has let me down, so I want to ask the experts. I would like to make a simple, extract saison. Almost all of the commercialy available ones here are not very good. I want something crisp and dry, and easy. I am not super serious about homebrewing, but if I could make a decent saison, I'll probally be hooked.

    So, I'm looking for a recipe, or a point in the right direction. I'm thinking I want to do X amount of Pilsner DME, some saaz, and a friendly yeast (3711?). Something nice and easy. Any tips?

    That will indeed make a tasty Saison.

    What size batch are you making?

    I would strongly recommend Briess Pilsen DME as your extract.

    Pils and/or wheat dme. wyeast 3711 is very easy to use and will ferment dry at basically any temperature you throw at it.

    Thanks Jack! I'm thinking 2.5 gallons, because I'll be doing it on the stove. I've never done an extract batch before, Ive only ever done the Brooklyn Brewshop kits. How much extract would I need, or can you point me to a source that would help me out?

    For a 2.5 gallon batch:

    · 3 lbs. Briess Pilsen DME

    · 0.5 lb. table sugar if you want a very dry Saison; otherwise add 0.5 lbs. of Briess Pilsen DME for a total of 3.5 lbs.

    · 3-4 AAUs of hops for bittering (60 minute boil)

    · 1/4 oz. Saaz for the last 15 minutes of boil

    · 1/4 oz. Saaz for the end of boil addition

    You can use Saaz hops for the bittering addition or another hop like Warrior or Magnum.

    I just want to reinforce what @JackHorzempa has brought up. In my extract brewing adventures I have come to the conclusion that extract doesn't ferment out as low as all grain, so the addition of simple sugar is important to dry the beer out a bit more.

    For yeast I would suggest 3711, or Danstar Belle Saison yeast.

    I also would suggest following JH recommendation for simple sugar. I can confirm that extract final gravity does not get as low as many would like for dry beers.

    My buddy and I brewed a delicious saison this past summer. This is the recipe we used for a 5 gallon batch.

    3lbs wheat LME
    7lbs pils LME @ 20 minutes
    1oz Saaz 60 minutes
    .5oz Sorachi Ace @10 minutes
    .5oz Sorachi Ace @ flameout
    3711 yeast

    So, I finally got around to brewing!

    After a few set backs, I ended up doing 2.5 gallons, full 60 min boil.

    1/2oz saaz at 60, with 1lb of golden DME
    Then 2lb Pilsner DME, and 1/2lb sugar and .75oz saaz at 10
    .75 oz saaz at FO
    Used rehydrated Danstar Belle Saison, that's what the LHBS had.

    Everything went pretty smoothly, other than a huge boil over when I added the first round of DME. Even with dumping the wort through a strainer, I feel like I ended up with more trub than I should have, but I think I'll be ok.

    I hit OG according to Brewers Friend.

    The only other concern that I have is that I probally used too many hops, but I decided to trust the homebrew store guy on that one. My frementor looks like a bucket of pond water.

    Couldn't really figure out how to post a picture and comment at the same time, but here's what I ended up with today. ^

    Brewed on Jan. 31st, first sample today. I was really happy with the way it tasted, and shocked by the color (in a good way).

    I was a little worried about the temperature, because I had it in the basement for the first week, around 60*, but it looks like it still fermented down pretty low. I'll check again on Thursday, and hopefully be able to bottle this weekend, unless anyone thinks it should sit for a little while longer.
