Cellar list - Age or Pull

    It is going to take you 50 years to drink all of that beer. Stop buying any more beer and start drinking what you have. So much great beer, what a waste to have it gathering dust in the cellar.

    Well the GF of 8 years has been planning on having a FW beer tasting event our wedding reception, whenever that happens. The majority of the best of the best are all for important games. Playoff series, World Cup, Big rivalry games, etc. We constantly talk about doing more beer shares but we really doing those when we are back in the PNW, just too many Bros in California that are very off putting to drinking.

    Although some of the bottles are now there to just sit the Cantillon for example my girlfriend is trying to build that up to slowly to have a nice collection after finally trying it in Belgium last year she became obsessed although I have notified her of the realities of acquiring it here in the states...

    Most Verticals though I try to build up to bring to family functions for the most part.

    What's your cellar set up? Cold storage? With all that you invested you can't be letting that beer waste away at room temp. Pics?

    I'm glad you at least have some plans to drink them... you should probably do a 'hey, its Thursday and I feel like something special' once in a while though.

    If it were wine it would be a well curated cellar. Since its beer it's pointless hoarding.

    Several people have mentioned individual beers from the list, but I have stopped aging any stouts more than two years unless they are big boys (>14 or 15% abv). I've just had too many disappointments with stouts that while somewhat hot had tasty flavors fresh and then became oxidized by the time I opened one again three or four years later. I think BCBS can still be quite tasty 3 years old, and I've had some 3 year-old and 4 year-old Bruery stouts that were great. Get all those other stouts out of boxes or wherever, put'em together, and have a big ol' stout tasting or make it a stout week and have one every night or something. To hell with your health; those beers deserve to be drunk when they're still tasty!

    I would drink several of the ccbombs '16. 7 is too many when the coffee is just going to fade and its too good fresh.

    I agree especially since its not as good as '15, but I still have 4 at home so most of the others are just there for mere temperature control as my home cellar can range from 60(Winter)-70(summer) so I leave extras in there just to maintain quality until I have more space at the house.

    I agree on BOMB!, but Abraxas will definitely hold up and mellow out (becomes more creamy and balanced). I wouldn't age more than 3 years though. Had 14 and 16 back to back and was super impressed with the 14.

    Drink the fruited lambics as soon as your whim allows. It's not that they'll go bad but the fruit will fade. Not what the makers were hoping for your drinking experience. That said, don't panic if it's been a couple years, they'll still be great.

    If you've played poker, you know how much truth there is to this. In a similar fashion, I can tell you that I remember most of the beers in my cellar with remarkable accuracy. I look forward to them, and I too like to collect. As the years go by I find myself going into Untappd to tick a beer only to see I've already checked in that beer a year or two ago.

    My point is, the way the human brain works is that drinking most of those beers isn't going to be a memorable experience. Sure there will be a few special occasions, but you'll be hard pressed to remember most of them over the long run.

    Or maybe I'm just getting old! Cheers!

    Not all, some I haven't had in awhile or had specific vintages and its more clearing out space I guess I should have edited out anything of interest?!?!!?!

    I'm sure you're a good dude and all, but all I'm saying is that anyone with a list like the one that you felt compelled to provide in great detail is not usually someone that would need cellar guidance. I would suspect your cellar list is superior to 90+% of the guys and gals that subscribe to this site. Seek consult as you wish, but come on man, there's 300 or so beers on your list. Do you really need consult on whether or not you should take the 25 or so bottles of '13-16 bourbon county out of the cellar because it's pointless to age it? They print on the bottle that it develops up to 5 years.
    There are many references, to include several on this site that can provide you with cellar guidance. To me it comes off as your priorities being to advertise how many great beers you have and how many people are taking notice based on their responses to your post.

    Label me a jerk, or some other clever adjective if you want to, but I would suspect several people are probably thinking the same thing.

    Drop em in excel and run a random number generator twice a night. It will be a shame if all this great beer goes past it's prime in your "cellar."

    Don't take this as a snarky comment cuz it's just like my opinion man but all the flavored stouts and BA stouts I would drink sooner than later. That's just me.
