February what home brew u drinkin

    Hey, I would not be quick to quit wood, unless you have tryed many wood treated brews and did not like them. Sometimes the beer you made needs 6 to 12 months before it STARTS to come around. My Burton ale is one of those.
    After having it sit on 4.5 oz of oak for 3 months it is crap tasting for a while, then it starts to really shine. I'd leave that beer for another 2 or more months before trying again. You might be surprised.

    When I tasted it on bottling day it tasted great, it's as if the carbonation brought the wood to the front. I plan on letting it sit, but in the meantime I have a bunch of simple beers I want to brew.

    I just kegged and started carbonating what I call Euro Beer: French and German yeast(don't know which actually was viable), English malts and German hops. The first glass was cold, moderately clear and very tasty, I can't wait to try it again tonight.

    nothing yet but 3 fermenters going and one about to be going...
    all brewed since last sat..
    B-52 Hammock Bomb Coconut Porter
    Steady Roller(Blonde)
    JJ Famous Pale(Burton Pale)
    Nobleicious(AMerican IPA)
    blonde will be finished first, noblicious and hammock bomb will be done in about 4-5wks, and the burton I have no idea(my first).


    so unfortunately.... NOTHING!

    Poured the first Oaked and Jacked Oatmeal Stout. A little heavy handed on the whiskey (I added a couple Tablespoons at kegging because I thought it needed more) It's saving grace is that it finishes with a roasted malt and dry woody finish so it's not a whiskey bomb all the way around.

    Some pictures of our house Lemon Lime Hefe. Really proud of this beer. Super clear and clean. Lemon and Lime are easily separated in your the forefront, and typical hefe (clove and banana) finish. We have brewed it with 7 different yeast cultures to really try and dial it in. This is with 380. Always gets great reviews, and next local competition it will get entered I think.

    Drinking more of a blonde ale, fermented with a caught wild yeast. Dry hopped liberally with Nelson. Turned out to be a very easy drinker.

    Looks good. Very clear for a hefe. Does WLP380 just floc that well for you or are you doing something to help clarify?

    Cracked open a barleywine and saison. The wood isn't as agressive in the barleywine as it was last week. Maybe it'll come around. The saison is pretty tasty. The wine isn't coming through too much, but the nelson hops make it pop.

    With the previous recipe, I closely followed a clone recipe for Founders Breakfast Stout. The previous recipe called for some baker's chocolate, which I found gave the beer an oily mouthfeel which I wasn't too fond of. It also killed the head retention, so I just cut it out altogether.

    I also removed coffee from the boil and opted for just adding some cold-pressed coffee to the fermenter, because from the pre-fermentation taste I took, I didn't think it added much. I also added a half pound of lactose to this recipe to give it a bit more body and sweetness (the original recipe had none).

    It's crazy how people's experiences differ. I used the bakers chocolate with no perceivable effects.

    It is very clear for a hefe. This is just 380 with standard ferm temps and flocculation. I did not cold crash, or any fining.
