    It may have been the type of baker's chocolate I used. I went with Ghirardelli, 60% Bittersweet Chocolate Chips. What have you used?

    Kinda sorta Bissell Brothers Swish clone. More of just a regular juicy NE style anyway.

    Drinking a recent Belgian strong ale while bottling it up. Came out too sweet for the style, but not in an overly cloying way. Still quite enjoyable.

    First test bottle of the IPA I'm entering into a few (and my first) competitions.

    Fits the American IPA category with some NEIPA tendencies. My first "house" beer similar to the commercial beers I drink. Looking forward to some pro feedback from the competition judges!

    Biscuit rye pa. Young, but the simco,centennial galaxy dry hop are strong .

    Interesting how this DIPA has cleared so much after about 3 weeks in the keg. Tons of protein in the grain bill, high chloride level, 8 oz of dry hops at various stages. They only different variable to prevent the haze is the yeast. This is Conan with Brett Trois co-pitch. No doubt to me that the yeast is the key.
    The beer has improved with age but still not popping enough for my liking.

    Sampled my first ever home brew, half pitched with WLP566 and half with Wyeast 1318. Not too bad considering I jumped straight into all grain and made the recipe myself. Going to follow a recipe next batch. [​IMG] [​IMG]

    Opened a homebrewed Red IPA. On the downside the subtle roast I hoped to achieve by adding chocolate malts are much more subdued than I wanted. More present in the aroma than the taste. Some light toffee flavors from the caramel 60L malt. But the malt flavors are completely overwhelmed by the intense hops. I experimented with New Zealand Eukanet hops, and I will certainly use them again! Almost painfully bright pineapple and mango flavors and a burly, satisfying bitterness. Unintentionally I created a sort of red New England style juice-bomb. Clean yeast, prickly carbonation, strong head, and no noticeable off flavors. As with most of my beers, my one complain is that the body is rather on the thin side. But while this beer is still on the young side and should achieve greater clarity and refinement with a few weeks of age, I think it is the best thing ever to flow from my kettle.

    Starting, with Foley Bros prospect, followed by my Belgian maple wood, followed buy a Wallingford,Vt home brewers pale ale and currently sipping a little of the stout liqueur with a couple other home brewers, perfect

    Baltic Porter. It has been lagering for a month and my impatience has got the better of me. Carbed it up and while it is tasting good I know it will improve with age. Disconnected the tap and will be sharing it with friends a month from now.

    Snow beard session ipa on this not so snowy 57f day in western NY. Tastes great after brewing a two hearted clone today and hitting all my numbers.

    5.4%. 86 ish ibu. Loads of centennial, cascade, citra, ahtanum. So4 yeast, west coast water profile but tastes very ne juice bomb meets classic west coast ipa. Probably my best all grain ipa. So good I've passed on buying lots of commercial examples lately because I prefer this! Feels good.

    Once I get it warmed up from ~30°F I'll be drinking a Heady Topper clone. Why 30°? Well, apparently I removed the temperature controller probe from the chest freezer / kegerator this morning without realizing it. Anyone up for a bunch of frozen beer?
