I can't think of another brewery in LA that did a spontanous fermentation beer yet.

Cucurbitophobia is the same. They used mixed cultures even though it was open fermentation. They didn't do spontaneous fermentation like HPB did. Don't think Chaos is a friend of mine was spontaneous either

"The wort is then fermented and aged in neutral French oak barrels with our diverse house culture." (chaos is a friend of mine)

Monkish has also done open fermentation with Other Half and AZ Wilderness. Both are probably in barrels right now. I'm assuming they pitched a house mixed culture, I doubt there's enough wild yeast and bacteria in the air there. Curious how HPB pulled that off.

If you've gone into HPB on a crowded warm night, there's definitely enough bacteria floating around there from the hipsters to inoculate water. ;D

It goes deeper than this. They have painstakingly (with permission) cloned the environment of the Cantillon Brewery and will shortly be an American lambic style only brewery.

I can confirm after seeing the cobwebs and dust on the rafters.

Anybody at Hermosillo want to share the growler fill options for the weekend? Website is lagging I think

Growler fills right now are well well, for crazy and Timbo.

Got a new batch of raised eyebrows on and some other pretty good stuff. The cold box cold ship was excellent too - very lemon zesty...great balance of funk/tart.

They're calling 5 gal Raised Eyebrows a "preview keg" so I hope this means a bottle release is imminent? Last time I believe it was tasting room only but i'm hoping for Eventbrite this time.

Lately they've been doing preview kegs at release days of upcoming stuff, just most of the time they don't announce it. Fun Juice, GJG b3, Occupied Space b2 and Company of Parrots b2 come to mind. I'm sure there's more but those ones stood out.

Another cloud beer title with 3 days advance warning. Was going to try and get there by 1, but I don't think that's gonna cut it. Glad to see they are starting with a reasonable limit this time around, should make for smoother line management than cloud party

Wait.. about 3 days advance notice is on par at the very least for their can releases. Maybe folks are just jaded by Monkish's same day announcement, but HPB has always been pretty solid in terms of forewarning, especially for a weekday release.

That wasn't a knock on HPB about announcements and timings, just hinting that with 3 days, a lot of people might/will try to rearrange their schedule to make the release, especially because the beer name has the 'cloud' buzzword in it. I really appreciate the timing of the announcement, I was trying to figure out when to pick up cool ship, and this is as good a reason as any.
