Mad Fermentationist Saison Blend

    Just to let everyone know, Bootleg Biology is currently holding a pre-sale of homebrew cultures, including a saison blend obtained from @OldSock (Mike Tonsmeire, who writes the Mad Fermentationist blog and wrote American Sour Beers). The blend contains saison yeast, a wild saccharomyces yeast, a few brett strains, and lactobacillus. Pretty much everything you need to know is in this blog post (Tonsmeire is answering questions in the comments, so there is additional info there). It's worth noting that this isn't really a sour blend, it is intended to produce a dry, funky saison with mild tartness (pH of 3.8 or 3.9). The sale goes through March 5 and the cultures will ship by March 22. (To be clear, I have no affiliation with the vendor, although I did order a few packets.)

    This company is local to me and their cultures have been produced some killer results for me in the wild/sour/funky department. I'm stoked on this release!

    Saw the nice post by Jeff on FB for you @OldSock …I'm in! Really nice that we can now list one strain for your saison recipes instead of the 4… :slight_smile:

    I may have overlooked this: how much are you purchasing (size of slurry for 5 gallon pitch size)?

    Add some other cultures to lower the cost of shipping per culture?

    Jeff says the exact number depends on the propagation, but 100 billion cells "for real" is the minimum.

    Thanks. I saw a few things at their website that tempt me. That Sacc arlingtonia strain, for one. And who doesn't want to tell friends and family, just as they are about to take their first sip, that you made this beer with yeast and bacteria extracted from OldSock's?

    We pitched their kombucha culture into a couple barrels at Modern Times when we started. Have tasted good things from the Funk Weapon series, but haven't brewed with them.

    What are your thoughts on repitching your blend? How do you maintain your culture at home?

    I harvest (usually from primary) and refrigerate until I need it again. I'll make a starter if it has been a few months. I'm OK with drift, but nice to have the option to reset now if it changes for the worse or dies!
