I love mosaic. I'm a total mosaic ****. And I love chinook. I love that classic piney bitterness. Every so often I'll stumble (figuratively, of course, because responsible drinking, right?) across a beer that's brewed with both mosaic and chinook, and I'll get so excited that I have to go change my pants.

Right now I'm drinking a Foundation Venture which is brewed with cascade, chinook, columbus, el dorado and mosaic. It's not pants-changingly incredible but it is making me use my back-space key more than usual.

What's your favourite hops combination? Example of a beer brewed therewith?

I still most prefer some combination of the classic C-hops plus some of the "second wave" US hop varieties to really make an IPA/Pale Ale kick. I'd say Centennial or Chinook plus either Amarillo or Simcoe really make for a tasty combination. Union Jack would be an example that I think has ALL of these hops. And it is still an absolutely fantastic beer.

Now I'll sit back and watch the love for Australian/South African/Kiwi hops roll in. Don't worry, I like those too..."It takes a village."

Citra and columbus. Try double dry hopped fort Point from Trillium and you will understand.

Citra and Mosaic. From my perspective, SueMo is just about the perfect beer.

Man, I still haven't gotten to the point where I can confidently distinguish individual hops in beers. :slight_frown: Guess I need to drink more single hop APAs/IPAs. Or actually go on some brewery tours. Or homebrew (with a friend) more than the 2 batches/year we've averaged over the past several years.

Neither have I, especially most of the newer, southern hemisphere ones... and the older ones, the European hops that I think of as simply tasting like 'beer' and can't distinguish from each other.

But there are a few that are just like catnip to me.

i do some homebrewing so i like to "research" which beers have which hops

found some great yet awkwardly common combinations of hops

    Columbus+Cascade+Centennial+Simcoe = a Union Jack-esque IPA
    Nugget+Mosaic+Citra+Galaxy = a NE-esque juicy IPA

i like to homebrew with these hop combinations but alter the yeast, malt, and/or dry hop quantities.

personally I could live off of Union Jack more than any other beer

One of my favorite combinations is chinook and citra. Dry Dock had Breakwater pale ale that was all chinook, and then dryhopped with citra. That beer was fantastic. Citra and centennial work well too, as does citra and columbus. I sure love citra.

    Bingo!

2:1 Citra/Columbus dry hop is absolutely heavenly! I have used that combo in many IPA's I've brew for years. This is truely a combination better than it's individual parts.

1:1 Nelson/Galaxy is also nice...it's harder to do now and much pricier.

Belma is a Trademarked hop from Peterbaugh Farms in Mabton, Washington. Is some one from NY growing it?
    Form their web page.
    Alpha Acid 12.1%

Belma: Sweetly named after the road our family's
homestead and farm has stood since the 1930's.
We discovered Belma growing up the side of our picking facility,
fell in love with its strawberry aroma on the vine and its robust nature.
A daughter of Magnum & Kitamidori, it imparts strawberry,
    citrus, melon and grapefruit notes.
Dr. Shellhammer from Oregon State University tested Belma™
and created a Pale Ale. He noted the following description:
A very clean hop, with an orange, slight grapefruit,
tropical pineapple, strawberry, and melon aroma.

We are excited to introduce Belma with the growing demand of
innovative varietals within the craft beer industry.
    Welcome to the family, Belma
As this is a new variety, we welcome
customer feedback and encourage you to

I thought it was from NY. My mistake. WIllamette is another that I bet is grown out west that I would also think was from NY. I don't see huge brewers using either. It was regional beer that had these hops this past year for me.
