-> Poll #4 <- determined that Generic Two Row or Pale Ale Malt or Pilsner are IN. Carapils and/or Other Crystal Malt(s) are IN. Sugar, Sugar Products, and/or Honey are potentially in.

This poll will determine the specific base malt(s) (Generic Two Row, Pale Ale Malt, and/or Pilsner).

This is a straight plurality poll, unless by some miracle more than one choice gets votes from more than 50% of respondents, in which case there will be another poll to sort out whether there will be multiple malts from this list in. Otherwise, winner take all. Consider jumping ship to a similar choice if your first choice is losing. You can select more than one choice. Want something that's not listed? Write it in.

I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, as well as any possible yeast strain selection that might be kicking around in your head.

This poll will be open for 46 hours.

If you have issues with or suggestions for methodologies used in this project, please send them via beermail. Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently.

The Averagely Perfect ESB Recipe so far...

    Target ABV: 5.4%
    OG: 1.053
    FG: 1.012 (77.4% Apparent Attenuation)
    Grain Bill:
---Generic Two Row, Pale Ale Malt, and/or Pilsner IN (exact choice(s) TBD, this poll)
---Carapils and/or Other Crystal Malt(s) IN (exact choice(s) TBD, future poll)

---Sugar, Sugar Products, and/or Honey possibly in (TBD, future poll)

I would like to see Maris Otter in this beer but Halcyon or Golden Promise would be nice too.
No American malt for this one.

I voted for Golden Promise because I have enjoyed the beers I've made with it and I believe it is fairly easy to obtain (for instance, I believe most LBHS's would probably have it). My feeling on some of the others is that they would be harder for some brewers to get their hands on.

Then again, I'm not sure how much that really matters. If a brewer can only get Maris Otter and uses it in place of something like Optic, I have to imagine the beer will still turn out okay.

Honestly only have used Maris Otter, other then the US 2-row/Pale. Not sure how it will go, or if my LHBS has it but I went out on a limb and selected Golden Promise on this. I realize that is isn't being risky, but trying some "new" to me is part of this game too.

Was going to go maris but discovered LHBS currently only has bairds which isn't floor malted. The Golden Promise and Pearl are though.

I hope no one would want American malt to make a British beer.

Addendum (to poll #4 results, but posting here too to make sure it's seen): It was correctly pointed out to me vial beermail that according to the stated rules, 3 choices beyond the top pick should have advanced for further consideration.

Therefore, Munich and/or Vienna are re-classified as possibly in, TBD. Amber/Brown remains on the outside looking in, and would need a groundswell of chatter to compel a buyers' remorse vote.

Maris Otter for me; a good foundation for this one. Not to mention that I've got ~70 pounds in inventory right now.

Is all maris otter floor malted?

I don't believe so. I see on some websites that a couple different malts have "floor malted" as options or different selection.

Bairds is not. TF is. My store only carries Bairds which is why I voted for GP/Pearl instead.

I'd be good with maris otter or golden promise. Perhaps a combo of the two? Lord know I like combining base malts, lol.

Combine multiple types of Maris otter. The recent malt article in Zymurgy included a table showing Lovibond differences of MO types. Presumably if they are kilned differently, there are flavor impacts. I have never done side by side tastings of MO types, but I bet there is something worth learning. I rallied for floor malted just because it sounds Extra Special.

The only thing I found in 10 minutes was a reddit:
Sounds like floor malted is either complex or inconsistent depending on if you're a glass-is-half-full kinda guy.
