What would you call a beer made with Munton's plain light DME and German Hallertau hops?
I'm doing a few experiments and this is one I want to try. Thanks!

Well, it would depend upon the OG, amount of hops (e.g., IBUs), ...

If you were to brew to an OG of around 1.050 and 30-40 IBUs maybe the term of German Pale Ale could be used?

    Cheers!

Your type of yeast could have a say in what style name to put on this beer too.

Has the makings of a blond or an all-malt cream ale.

Blonde ale, unless using a lager yeast.
