    Tomorrow brewing a Scottish Export using Wyeast 1318 starter made from my 8 months frozen ranched yeast, I will cross my fingers !!!

    I brew up a quick extract batch in one kettle while my all grain batch mashes in. My last three brew days have included this, and just like you, I kick myself for not doing it sooner.

    Can't do 10 gallons, but I like the funky dark saison idea. Maybe recipe number IV, dark saison with zante currants and wine soaked oak on brett brux.

    Bottled my dark strong ale. Half a bottle left so half a glass for me. Attenuated more then expect with a higher then expected OG. The earthy hops and rye malt hide the 9% ABV very well. Think this one is a keeper.

    A 10 gal batch with 12# 2Row, 6# light Munich, 3# flaked rice, and 3# malted wheat and lots of hops...cleaning out most of the beer pantry :slight_smile:

    I Pitched this British IPA 7 days ago. Golden promise, carastan, target (60 min) and Wyeast 1318. Fermentation is wrapping up. I was hopping to have it ready to serve by the 20th, dry hopped and carbed for a crawfish boil. (The beer was not planned for the boil, just a coincidence in timing). If it's not, that ok, I'm still looking forward to this home brew.

    Brewed a pale ale with orange yesterday, and doing a saison tomorrow. need to load up for a family get-together/camping trip in June. Pretty dissapionted in how little zest I got from one orange, so I'll probally add 2 or 3 worth with the dry hop. I'm also using a liquid yeast for the saison tomorrow, which will be my first time doing so. I was going to ask what people thought about it, but I can't remember what kind it is, something like 85__ or 58__? I've used Belle Saison dry in the past, and was pretty happy with it. I haven't done a lot of experimenting yet though.

    Brewed it – it's awesome! I added additional sour dregs to mine in secondary. Just give it a lot of time (8 months to a year) on the oak and currants.

    Rainy days make for the best brew days. Brewing what I'll call a pale ale. Golden Promise, Rye and a touch of honey malt. Citra and Nelson hops. Should be 4.8% and 40 ibus.

    Tradition to drink a homebrew while brewing a new batch. Breakfast Stout is hitting the spot.

    Brewed on Saturday. With summer just about here I figured it was time to make a big RIS to be ready for the fall. Trying for a clone of Darkness. I was barely able to squeeze the mash into my 10 gallon cooler so now I know what my max capacity is! Was a little low on the efficiency but it'll be a good beer anyway. Yeast has been very active so blow off tube was a must.

    Just added this blood orange zest in a hop bag to my milkshake IPA, 9 days in primary. We shall see...

    Got all my ingredients ready to brew up a Summer Saison. Pils, Vienna, Flaked Wheat and Oats, Acid malt, Blegian Aromatic, Tettnang, Hallertaur, Citra, Dupont yeast. Also have 4 new Brett strains to play with at bottling! I hope all 15 gallons fits in my 1/2 barrel keg fermenter... we shall see. Just need to clean the garage out (AGAIN!!!!) so I can brew Saturday.

    Bottled the ESB, planning on a quick any malt goes brew for tonight, Sunday a wake up dead clone.
    I'd attempt a Avery Uncle Jacobs Stout Clone,,,,,, but have no idea where to begin. For me it is an outstanding stout with tastes never sensed be fore.

    Trying to match the ABV of Avery's beers would be very difficult! They do list the basic ingredients on their site so you can try and create your own clone recipe. Haven't had this year's Uncle Jacob's yet but I've always enjoyed Avery's Stouts.

    Just brewed the APESB. just under 5 gallons in my bucket with an OG of 1.053. Had my chiller's inlet line come off near the end of chilling....Can't seem to figure out my boil off rate....

    On top of that was trying to rack my RIS to secondary on some cocoa powder and pretty sure I ruined it.... Learned that coffee beans need to be in a bag.... had some serious cavitation when a bean got stuck in my racking cane.... ended up tilting the bucket it was going into and filtering through a hop bag while pouring it.... Not sure what to do with this now.

    Decided to re-inventory all my grains... Got it all nice and orderly in excel, hope I keep up with it this time! Currently have about 150# of malt (mostly the 59# each of German Pils and 2-row base malt I have).

    About to pull a hydro reading of my session IPA I brewed last week, hoping I am at FG so I can add the 2nd dry-hop tomorrow.

    Brewed Northern Brewer's Alpha Leonis stout at the very beginning of May. I already had some of the ingredients on hand, so rather than buying the kit, I just picked up what I needed (mainly the Southern Star hops). I used wlp007 in place of their recommended yeast. From the taste of the last gravity sample, I think it's going to be pretty darn good. On the hoppy side; sort of like Old Rasputin. Only a tad lower in ABV. It finished at about 6.7%. I'll be transferring to keg this weekend, and let it age for a few weeks.

    Hydro reading on my NE session pale, the one with Belma, Mandarina, Azacca and Columbus. Currently at FG of 1.015 or 3.8% ABV. Tasting SO good! Still yet to add the second dry hop... Just have to make sure it's at FG or not (expected was 1.011), but my last session with Conan attenuated less than my larger beers as well, so we will see!
