    I like the sign and the green glow. Lol, looks like an L.A. nightclub surrounded by two Potbelly's...not that any of that will matter once they start pouring awesome beers.

    Looks like we should be expecting an opening in June or July at the latest. Might be a day I take off work if it's during the weekday. Been a big fan since I tried my first beer from Shaun and want to support right from the get go.

    I'm less excited on this now based on Chicago catching up to the game, but as long as he doesn't schedule a fest on Dark Lord Day, I too look forward to supporting this place on the rare occasions I can make it out to the burbs.

    Saw on FB that Shaun started brewing today. So....maybe the weekend of July 14/15 then? That's my date in the pool

    Well, I think he'll need more than one beer to open up. :wink:

    I'm guessing he's probably going to want to do test batches to get the system down, etc. I hope you're right on that weekend, though, as I think I'm free that weekend. :grinning:

    I also found it interesting that it appeared he was brewing a saison first. I like/love saisons, but I know it's not a popular style among many beer nerds. I wonder if he decided to brew that first, as opposed to an adjunct stout or hazy IPA, in order to avoid the loud screams and rivers of tears from craft beer nerds if the batch goes wrong. :flushed:

    It would be the most epic troll if he brewed Saisons only at his new spot.

    I think that hit the nail on the head. If you are testing your first batch on a new system, I think saisons give a little more margin for error. Can you imagine if your first batch was a well thought out, epic 2x NEIPA loaded with tons of the most expensive, sought after hops, and then you discover an issue with the system and your calling card beer is botched?

    I would think that if he has to have 4-8 beers ready by opening day that he'd be doing the NEIPA last since the freshness would matter more too right?

    If he is doing test batches and if everything goes correctly put them out to an audience, yes, the neipa's must be brewed last. A fresh saison is just as good as a saison a few weeks old. Also, it definitely is the time for saisons, so of course he is going to put one out first. Just my two cents.

    Hey Everyone!

    Long time! Been super busy getting things ready. You guys pretty much got it. Saison was the first choice to have something to iron out any wrinkles that came up - luckily the brew went pretty great and I love saisons! Today was a easy drinkin wheat ale (our light offering), tomorrow will be a NE Pale Ale with lotsa Citra, then next week we have a NE Rye IPA with Chinook and Idaho 7 hops, and finally a NE DIPA with Citra, El Dorado and Vic Secret - Yes... I love hops. We're shooting for all the hops to be both canned and on tap as long our canner arrives and is opperating by then (fingers crossed). We had to hold off on a stout otherwise we'd have to hold off opening for a couple weeks longer than we'd like and I'm too thirsty to wait any longer, but it'll be out soon after open! We're shooting for mid July so hang in there! Hoping to be able to make an official announcement soon, once we can lock in dates and packaging, but for now that's the plan!

    Bravo for going the canning line route. For as much as I like Mikerphone, $14 IPA bottles have wore me down where frankly I'm not as interested as I would have been with the cost per ounce benefit cans typically provide.

    I agree, super excited to see that you are canning. Will there be distribution or brewery only releases? Either way, stoked.
