    We just went to fermenter with our first sour....

    It's a kettle sour...We used Bootlegbiology Sour weapon L for kettle souring....Wort started out at 4.8 oh and within 18 hrs it dropped down to 3.5 ph....Boiled and is fermenting right now for final fermentation with WLP 644.

    I've got my Gruit-style ale almost ready for bottling, and also a home-made alcoholic "ginger" beer coming up nicely. Not sure I will get time to do a new batch, but if I do it's going to be a big Rye-wine (Rye based barleywine) that I can put down for a couple of years.

    Added my fermentation dry hop tonight, which was 2oz Citra. The London Ale III is roaring! Wouldn't be suprised if it hit FG in another day or two, four days after pitching.

    Once at FG, I will give a few days while I crash my Rauchbier and then hit it with the 6oz Citra DH charge for 2 days then crash and keg.

    Next time, you might want to try the Milk the Funk "Reverse Kettle Sour" technique. It helps to get more ester formation/complexity in your short term sour beers.

    Brewed an IPA Saturday night with my brother. Golden Promise and oats. Big hand of Citra/Mosaic late boil/whirlpool. I'll be hitting it with it's first dry hop tonight (day 3). I'll probably keg Sunday or Monday with some cryo mosaic/citra. First time with this stuff so I'm excited! Hope to have it ready to serve by Thursday next week!

    Just made another batch of my Summer Pilsner Ale, it's currently fermenting. I'll be gathering the supplies for my annual pumpkin ale and i've been thinking about a Mocktoberfest. I also want to brew a NEIPA for my upcoming wedding. Been trying to research recipes like crazy.

    The event was awesome, and the beer was fabulous. Lots of questions about why I'm not brewing professionally. Really encouraging and humbling. Also found out that they are sending our beer to the What The Funk Invitational at Crooked Stave for GABF.

    Brewed a Wheaton saison kit from northern brewer today. Came in slightly under OG. Think I left a little honey and extract in the bottles is why.

    My brothers back , an we are currently brewing a brothers IPA#2 with cascade, citra, jarillo and Equinox. Excellent day

    Bottled my Tumbler Autumn Brown clone today. It ended 2 points higher than my recipe, which is okay since the original is on the dry side for a brown. Plan to crack the first one open on Labor Day

    Brewing a fresh hop red ipa tomorrow. Decided to go with 100% red x malt and use left over Summit and Centennial in the boil. Plan on picking chinook cones tomorrow and throwing them in the hop stand.

    Brewed a sessionable IPA this morning. Should come in around 5%. It's been years since doing one.

    Grain bill was 2 row, golden promise, flaked wheat, carafoam, a little rye, and a touch of Munich for color.

    Hops were Mosaic, Simcoe, Kohatu, and Columbus. Went with 1318 for yeast. Hoping for big flavor and aroma in a little beer with mouthfeel to boot. At least I can try.

    Just brewed my first NEIPA - Currently fermenting away as I type. It smells amazing!
    Grain Bill of 2 Row, Vienna, Flaked Wheat, Oats, Honey malt and Crystal 15. Used Columbus, Nelson Sauvin, and Citra. Going to DH with Citra, Nelson and possibly simcoe.

    Crashing my Citra NE Pale currently. Really liking the results of London III (vs. Conan) at this stage at least. Huge pineapple notes with a tropical profile a bit more intense than Conan. Fermented quickly and attenuated nicely (around 80%). Will keg tomorrow and tap on Wednesday... So far, so good. Coming in at 4.8%

    Also sampled my RIS brewed back in March. Big fudgey chocolate and coffee/roast on the finish, lightly. Very tasty. Will be formally tapping this in a few weeks at my Oktoberfest party.

    Lastly, my Bamburg Style Helles Rauchbier is now lagering for the next 4-6 weeks at 32F.
