Style Suggestions For Mustard

    This is another club-driven, member competition thing, with extra ingredients assigned, then the brewer includes that in their beer. No limitations on style, etc. The only rule is the ingredient has to be identifiable in the beer. Of the ingredients suggested and dropped in a hat, all but one were either common or at least logical to use in beer. I drew the other one - mustard. They insist they mean prepared mustard, although I would think the oils in that would really screw with a beer. I'm thinking seed, and perhaps the smallest bit of prepared just to get a hint of the vinegar and meet the criteria.

    Not looking for recipe help really (although that would be nice), but more for style suggestions. I thought Berliner Weisse, but this has to be ready by late October, and it'll be a few weeks before I can brew it. Witbier also came to mind. Any other thoughts or ideas? Besides just forfeiting, that is?

    I don't think prepared mustard has oil? So I think you'd be ok, I could be wrong though. Rye goes well with mustard. How about a rye saison? Or throw some peppers and mustard in a brown ale... sort of a spicey brown mustard thing.

    Make a beer that tastes like a pretzel. That's what I'd do.

    Or, and I'm only half joking, a smoked beer that is reminiscent of a frankfurter.

    If I drew "mustard" in such a competition I would throw up middle finger and walk out. I don't foresee any mustard beer being palatable. The thought of it makes me want to vomit. And if I had to choose between a pint of that vomit and a mustard beer, it would be a close call.

    A Lichtenheiner wouldn't be a far stretch, or a more traditional suggestion, a Roggenbier.

    Although I've never had one, it seems about what I was thinking with my hotdog beer idea above.

    Not so sure about this one -- I thought these were made with hefe yeast. If so, that seems like high potential for yeast/mustard crash. But I could see the rye, some smoked malt, and some caraway seed teaming up with mustard to tell a story about a ham sandwich.

    Haha, well the clash is certainly a possibility although I was thinking they might actually be complimentary flavors.

    Don't listen to me though, I just had a peanut butter Hefeweizen last weekend and I'm disappointed to report hat tthose flavors works surprisingly well together.

    I like the saison idea.

    I put hard pretzels in my mash once. My beer did not taste like a pretzel. :slight_frown:

    Mustard is a stupid beer ingredient. You should find out which person threw mustard in the hat and then beat him bloody.

    no idea of a beer suggestion, but I don't think I would waste time and money to brew a beer with mustard.

    Well, no, not when you over simplify it like that.
    But throw in a boatload of clove and I'm singing a different tune...

    Wit with Indian yellow mustard seed instead of coriander...if your standing in the club is at stake :slight_smile:

    You can avoid clove in zeh hefe's.

    I can. Which had me thinking a smidgeon of horseradish. Because if we already have to suffer, what's a little piling on?

    After posting this last night, I did think of a witbier with mustard and horseradish. It seems so stupid and evil, it might almost work.
