    Yes, although if the mustard is kept to sensible amount in a Witbier it shouldn't be anymore noticeable than coriander in a normal Wit.

    Maybe this is the only way to do it, but I bet that brewers in a mustard beer contest (prepared mustard, mind you) are going to embrace the boldness of the concept and unleash their anger at the judges. After they taste my Dijon vinaigrette sour, they won't even be able to taste the mustard in your deftly made wit

    Assuming you're brewing a five gallon batch, you might want to pull off a gallon or so of the finished beer for the mustard treatment. If you love it, brew it again. If you don't, you don't want to have to drink or drain pour five gallons of unwanted beer.

    Trinity Brewing has a saison called damn it feels good to be a gangster, and it uses mustard very well.
