    Brewer Nick Hempfer Gets Acquainted With Belgian Candi Syrup


    ST. PAUL, Minn. (October 17, 2017) – Every few months, a Summit Brewer gets a crack at crafting a unique, one-off beer all by their lonesome. No rules, no budgets, no outside influences. These beers, which are known as the Summit Unchained Series, celebrate our brewers’ skill and creativity. Brewer Nick Hempfer brewed his first Unchained beer in 2015 — an ESB made with Earl Grey tea — and ever since he’s been eager to tackle another.

    While developing Summit Unchained 26: Westie 7th, a Belgian-Style Dark Ale whose name is a nod to our St. Paul brewery’s neighborhood, Hempfer discovered the delicious world of Belgian candi syrups — an ingredient often used by Belgian brewers to increase the fermentable sugar in their beers.

    In addition to boosting a beer’s booze content, Belgian candi syrups also offer complex flavor profiles. Sacrificing his blood sugar, Hempfer sampled seven varieties before landing on a dark candi syrup with rich notes of dark fruit, dark caramel, and — lucky us — rum. A blend of specialty malts supports and highlights these flavors, while subtle, noble-type hops lie back and let the candi syrup shine. Finished with a Trappist-Style Ale yeast, you can expect traces of fig and raisin to round out the beer.

    Pouring rich mahogany in color, Westie 7th represents a style that, years ago, caught Hempfer by surprise. “During my early craft-beer drinking days,” Hempfer says, “my exposure to Belgian beers was limited to brews with overwhelming banana and clove profiles — flavors I personally don’t enjoy.” Later on, however, a friend poured Hempfer a rich quadrupel, surprising him with raisin, caramel, and fig flavors. “I was hooked,” says Hempfer, “and I have since sought out these rare, seemingly mythological beers brewed in monasteries.”

    If you, too, have been searching for a Belgian Whale, you’re in luck. Summit Unchained 26: Westie 7th will debut at the Summit Beer Hall on Thursday, October 26, with a Halloween Dance Party featuring DJ Barb Abney. Westie 7th will hit draft lines and 6-packs of 12-oz. cans in late October, only for a limited time.

    Color: Rich Mahogany (40 L)
    Malts: Pale, Moravian 37, Simpsons DRC, Weyermann CaraAroma, Weyermann Melanoidin
    Hops: Hallertau Mittlefruh, Saaz
    Kettle Additions: Belgian candi syrup
    Yeast: Trappist-Style Ale yeast
    Serving Tips: Serve at 55–60ºF in a snifter glass. Pair with roasted meats, pork loin, ribs, brisket, charcuterie, cheese, baked brie with figs, or crème brulee.

    Time for Summit to get more adventuresome!
    Put the Belgian Dark in rum barrels and add cacao nibs. Do something more unique than the bland/safe Unchained norms...

    I really hope whatever this rum beer is hits distribution. I know it takes a lot of barrels to produce enough beer to distribute but even if this rum beer was only distributed in the Twin Cities area it would create some needed Summit buzz. I'm too old and tired of tap room only beers or standing in line for hours to buy a $20+ bomber of beer. :grin:

    How about going back to the basics. I challenge Summit and the twin cities Craft brewers to produce a somewhat Traditional world class Double bock. Unless I missed something I haven't seen any twin cities brewery capable of doing it for a while now. Brau Brothers and Schells are capable but the twin cities???
    To me the buzz word "Belgian" is wore out and is no buy. Rum barrel etc. heck just drink the real thing switch to spirits.

    I am being negative. But I stick by my challenge.

    Waconia does a doppelbock that sees distribution. I haven't had it but untappd ratings suggest it's worth trying. Liftbridge did a really great doppelbock last fall, but it was draft only. I agree, that is a style I'd love to see more often. It's obviously a very different beer but Bad Weather Ominous scratches that similar "mid-high ABV dark brown malty sort of fruity" thing for me.

    If this is a Belgian quad (which it certainly sounds like), that's plenty adventurous for me! There's a distinct lack of good bottled quads from local places, so if this one is good, it'll be a worthy addition to the Twin Cities scene. Much more interesting than one more adjunct-laden bomber from a questionable new brewery that arrives for $20/pop.

    Thanks for all your interest and feedback, folks. We've got a very traditional Sticke Alt in bottles and draft just getting packaged this week, and this Belgian Dark Ale — adventurous for us, as we've never brewed with Belgian candi syrup before — will be in cans and draft. The rum barrels, well... they'll house a variety of surprises for draft only in the Summit Beer Hall and select Twin Cities accounts. No bombers.

    We know everyone wants different things, and no brewer should try to make everyone happy. We just hope you'll sit down with one of our beers from time to time and be happy when you do. Cheers!

    And WBC's dopplebock (along with BA RIS, BA Cherry Amber, and a new DIPA) with be on-tap this weekend at the taproom for their anniversary party. I believe they only brewed and distributed it once. It makes taproom appearances for special occasions from time to time.

    Thank you! I've missed tons of Summit beers that sounded great because going to the tap room is inconvenient for me. Chasing the latest and greatest isn't worth the work to me any more.
