    Brewing a single hop El Dorado IPA. Only used this hop once years ago and was unimpressed but I got some hop hash to do a side by side Dryhop comparison same beer dryhopped with el Dorado and one with el Dorado hop hash. First time trying hop hash so this should be interesting. Don’t let me down again el dorado

    Lager season for me...ordering up a lot of dry yeast for a couple 10 gal split batches (S-189, 34/70, S-23, M54). Anyone tried the Diamond lager yeast?

    Up next for me will be a NEIPA. It’ll get done right around Turkey Day. My plan will be 60/40 Rahr 2-row/white wheat, all mosaic (12oz/5 gal), and S04. Should be awesome.

    Bottled an Old Fezziwig clone today. Might be my last brewing activity (beyond reading) for a while as the coming weeks are quite busy.

    Haven’t brewed in a few months due to a broken hand. Final gravity right on target.

    Pale ale at 6%, hopped with Columbus and galaxy. 2 row, Pilsner, some rye, a touch of crystal and honey malt.

    Tasting and smelling great.

    Got 4 used kegs from Adventures in Homebrewing for $160 total and reconditioned/cleaned 2 of the 4. Brewed a Citra/Centennial session blonde ale — OG 1.044 — today with 1056. Seems like I am a season behind rather than ahead with my brewing....

    Blown away again by wlp072, French Ale. Friday afternoon the Biere de Garde went into the fermenter at 1.066, targeting 1.009 for FG. This morning it had already hit 83% apparent attenuation, at 1.011. wlp072 really, REALLY wants to ferment your beer. Ha ha!

    So on my NEIPA my fermentation is going so much faster this time it's insane. My predicted final gravity is 1.019 and I'm already at 1.014 and it's only day 3. last time brewing this it took me 7 days to get to 1.018. I did 2 things differnt... 1. Used aeration wand with o2 tank and 2. I pitched starter directly off stir plate with out decanting, normally I cold crash it and decant. Is there a down side to my beer finishing this low besides being drier? Should I just let it keep going or would you say start the cold crash so it doesn't get and drier ?

    What is the estimated IBU? For me, lower IBU beers can handle being a bit drier. Still, I don't have any experience with the NEIPA style, so it's tough to say. I tend to like my standard IPAs to finish around 1.012-ish; not much lower.

    On Sunday I kegged a Sacc Trois IPA with Equinox (Eukanat), Simcoe and fresh local Cascade and then reused the yeast cake by brewing up a Two Hearted-ish clone (anybody else get in on the $6.66 Centennial sale at Yakima Valley for Halloween?!?!?!) and adding it onto the cake. All kegs and fermenters are full, so I'm a happy man :grin:

    i did @DrMindbender . What a steal. Centennial is probably top 2 hop in my book. I also ordered 1/2 pd of comet for 6 dollars and they sent me a full pound with a note saying to enjoy the extra 8oz. Great company. Any suggestions on how to use comet as it's new to me and I've seen people saying it's extremely bitter and overpowering.

    I like to single hop a new hop I havent used before...Comet is great in IPAs, so I say go for a single hop IPA. Similar to Citra but a little less in your face.

    I may try just dry hopping it and usin it with a little centennial. I'm sure they will play nice.

    That OG is w/o 5# Brown sugar added during fermentation. Was actually a fairly simple brewday except under shooting my mash temp by 10° on 2 of the 3 mashes, and running out of propane.

    I had a pound of Comet last year and loved it. I got mostly dank, catty grapefruit out of it. More like grapefruit pith than juice, though. It was somewhat grassy as well. I didn't get any of the tropical fruit that Citra tends to have.
