Interesting interview with Caleb Station (Upland)

    Just read this interview with Caleb about the sour program at upland... interesting read! learned a few things, like his hope that people aren't aging the fruited lambics (i kinda knew that, but hadn't heard him put it so bluntly) and some of their potential plans for the future of the program there (come on, kegs of persimmon!)

    I've always drank the fruited lambics fresh (oh gawd, the joy in the thought of drinking this from the tap on a weekly basis) ... but this makes me ponder the question ... to age or not to age my Giglamesh/SR.

    i think that the gilgamesh has improved since it was released, but i don't know if it's gonna get any better either. it's a debate whenever i look in my cellar.

    The other interesting tidbit is that it seems that persimmon is heading to the drain...

    Someone want to help me tap the Upland sewer system?

    For what it's worth, I asked about whether or not to age Gilgamesh on their Facebook page. I forget what they said exactly, but it was something to the effect of "It's already been aged, drink it now".

    (They were a lot nicer than that, btw)

    I'm going to take my chances and let them age. I've already drank a few so I won't be too bummed if it turns to rubbish I suppose.

    Imagine if, "It's already been aged, drink it now" held true to everything else. LOL.

    @Zapy, I'm sure Brooks could help us out with that. :stuck_out_tongue:

    FWIW I liked Gilgamesh when it was released. I haven't tasted an aged version.
