    Another pint of the new NE Pale, please! Now that it's fully carbed, it's really poppin'! Big aroma, very fruit forward with a dankness on the finish. Drinks bigger than a 4.8% beer. Really tasty!

    Grisette with a high percentage of spelt and wheat. Dry hopped with Azacca

    OG: 1.047
    FG: 1.011 (Target was 1.014, but yeast over-achieved).
    ABV - 4.7%
    46 IBU (Tinsenth formula)
    3.5 SRM

    66.5% 2-Row
    20% White Wheat
    7% Vienna
    5% Oats
    1.5% Honey Malt

    0.5oz CTZ (first wort, 60min)

    1.25oz CTZ (5min)
    0.75oz Galaxy (5min)
    0.50oz Citra (5min)
    0.50oz Mandarina Bavaria (5min)

    2oz Galaxy (20min whirlpool @ flameout)
    1oz Citra (20min whirlpool @ flameout)
    0.75oz CTZ (20min whirlpool @ flameout)
    0.50oz Mandarina Bavaria (20min whirlpool @ flameout)

    Dry Hop #1 (24hrs after pitching yeast and showing signs of fermentation)
    1.5oz Mandarina
    1.0oz Citra
    1.0oz CTZ

    Dry Hop #2 (at or near FG)
    2.25oz Galaxy
    1.5oz Citra
    1.5oz Mandarina

    Mash at 155F (60min)
    Target 5.35 mash pH

    London Ale III Yeast (pitch and ferment at 65F)

    First bottle of a sour raspberry. Only 2 weeks in the bottle, so nothing great about it yet. Good flavors for sure, and no off flavors! No funk yet from the brett L and B that I added at bottling.

    A winter warmer focused on ginger. Came out much darker than I wanted, so I'll need to cut back on the Munich and Chocolate Wheat I used, maybe 1/2 of each and see what happens. Was 58% MO, 29% Munich, 8.5% Malted Oats, and 4.5% Chocolate Wheat. Probably up the amount of ginger as well, as it's a nice note now, but I could go for some more oomph.

    Toto's twin chocolate vanilla coconut brown porter. Aroma and taste are just as you would expect but finishes dry enough you want another sip. Also quite drinkable at around 5%. This definitely cracks the regular rotation.

    RDWAHAHB.

    Currently drinking my homebrewed pale ale, "Ryan Sherman's Tears." Brewed in honor of me winning a bet with Ryan about OSU not making the playoffs. Bite me, Ryan! :slight_smile:. Just an easy drinking, slightly malty, lightly hopped, then dry hopped with simcoe pale ale. Nothing fancy, but goes down easy. The label was designed by my wife and then printed onto mailing labels just to rub it in his face a bit more. Hah!

    centennial during the boil, then threw in some simcoe in the dry hop just because I had some extra laying around. Next up---a focal banger clone before my spring saison bonanza hits.

    A few more days of carbonation and cold conditioning has done this beer well. The blend of spicing and fruity esters really sings. The other 5 gallons is still warm in the fermenter waiting for the Brett to kick it up a notch.

    I'm enjoying my annual Christmas Solera Burton Ale (inspired by the late Fred Eckhardt and the Ballantine Brewery of Newark, NJ). This is year #26 of my solera, and it's tasting exquisite.
    (a picture will follow as soon as I figure out the interface on new software...:astonished:)
