    Bottled a Baltic Porter yesterday ((Zek’s Porter from AHA). Today, brewing a black IPA.

    Just put a 1.082 weizenbock in the fermentation closet. I had some wheat malt that needed to be used soon... problem solved

    Nelson Sauvin IPA
    2 row, pale malt, oats, a little cC40
    Magnum at 60 then Nelson at FO and whirlpool
    Omega DIPA.
    WIll use Nelson to dry hopped on day 3 then again in the keg about 2 weeks later

    Have my Christmas Pils underway and it's been buttery smooth! Nailing all my expected values. About a half hour left in the boil.

    Made an ordinary bitter. Used the Averagely Restricted Gloves (courtesy of @VikeMan) to squeeze the grain bag.

    Not much for Christmas ales so the last of my harvested Trappist yeast went into a Belgian triple yesterday. Had a great mash and fermentation is already over flowing!

    Quad is just finishing up fermentation and will be going into a barrel later this week.

    Bottled tettnang lager yesterday, today brewing another but adding extra hops. Must be my home grown tetnang were weaker than expected

    I kept it pretty simple:
    60% weyermann wheat
    40% barke (my current batch is at 11.1L)
    15ibu fresh perle @ 60 min
    3068

    • Racked my spontaneous sour over to secondary on 1oz of boiled french oak.
    • Kegged my house culture saison (530, 565, 3031) and it's tasting awesome. The nose is brett fruitiness but the taste is noble hop character, dupont spice, slight banana and pear esters. Really unique stuff. Can't wait to see how this culture evolves over time.
    • Brewed a Dark sour today and racked it onto the spontaneous cake. Recipe is loosely based on the RB dark sour recipe. I used a little extra oats and added torrified wheat in place of the wheat malt.

    Ugh! I don’t know! All fermenters are empty and 1 keg is empty. I feel the urge to fill a fermenter but I’m not sure what I’m in the mood for. I think Saturday will be a brew day but now I need to develop a recipe.

    Brewed up a single hop Eureka IPA today. Never brewed with it before...smelled like dank dark fruit, looking forward to the finished beer!

    What are your thoughts on Carahell. I've been looking at using it but never have. I'm trying to decide between it and Caramalt (17L). I know caramalt is a bit darker but but my finished SRM isn't too different as I'm using like 5%.

    After yesterday in pretty sure that will be my last brew of the winter. When using my wort chiller the runoff water was freezing on my driveway and making things dangerous. Besides brewing indoors how do you guys combat the winter?

    Could you use a long hose to drain into a nearby sewer or somewhere away from your driveway?
