    no boiling sap tonight , so, first a stout liquor, the a tetnang lager and finally the Burton ale. A good evening to you all!

    Pale ale with rye, hopped with columbus, cascade, centennial, and simcoe.

    This little ditty rounded out very nicely after a little conditioning. I probably wouldn't do this hop combo again but everything else is spot on.

    [​IMG] West coast DIPA - 9.3% dry @ 1.010 FG, infinity IBU, dry hopped in keg w/ Amarillo centennial and simcoe. Four weeks from brew day and she’s just rounding out now.

    First pour of Bitter Sweet Symphony my English Best Bitter (kegged and fined yesterday). Crystal clear amber with sticky lace. Rich toffee and honey notes over toasted biscuits. Mild peachy esters. Light floral spicy hop undertones. Dry crisp finish with lingering bitterness. We have a winner!

    Side by side tasting of my all-Empire and all-Vojvodina hopped ESBs. Same recipes except for the hops, with schedule/amounts except for bitterness adjustment at FWH.
    Empire: as stated before, its as advertised- fresh fig and plum primarily, with a hint of cucumber. Really interesting. I wish I had more to play around with.
    Vojvodina: spicy (allspice, black pepper, a little bit of star anise), woody, there's a fruitiness that I can't quite place

    Overall, these are both easy drinkers, and I'd use the same recipe again to test out hops that don't scream "IPA" in the future with a reduction of crystal malt. It's not cloying, its just a bit too much for me.

    Just kegged the APA brewed 3 weeks ago and poured a generous sample. Too lazy to do a picture but it's 100% North American pale ale malt, slightly hazy, you've seen a million of them.

    It seems this beer stepped over the line into straight IPA territory. My efficiency was better than expected and the final ABV was 6.1% rather than the 5.8 target. Also, the Apollo hops added with the yeast pitch really dominate the flavor... I swear they even added some extra IBU's. The Citra dry hop smells wonderful as expected. Not exactly what I was shooting for but good and I'm looking forward to tasting this again in a week or so when things have settled down.

    The saison portion of this experiment needs a few days of elevated temperatures to finish before bottling. Slapping the heating pad on tomorrow.

    Drank my first homebrew tonight from a kit I received Christmas before last (!). A stout. Tasty but no head retention. Happy it turned out as well as it did. Followed with a Bell's Black Note for comparison....

    Seems my pale ale came into it's own. Tasting great, I love the heist on this one, but whoever thinks hop head farms Chinook is going to throw pineapple, well, sorry to I form you it won't. I used their Chinook and cascade in this one and am getting no pineapple or citrus. It's more of an herbal piney profile. It' fucking delicious but not at all the beer I was going for.

    The CYBI Rogue Shakespeare Clone with Centennial subbed in for the Cascade IBU for IBU -- the Cascade I have had has had a very rosy/floral type of taste I don't care for -- and fermented with Wyeast 1272. This is really rounding out -- big chocolate/cocoa aromas and a moderate hop bitterness throughout -- around 55 IBU by recipe. I really like the body and malt character with the 1272 -- will keep going with it. Have been using it exclusively off of a pitch for 3-4 brews now. Enjoying it a lot.

    My first porter. It has Cinnamon sticks, vanilla beans, and oak soaked in makers mark. She's finally drinking great after aging for 2 months. Needed some time for the oak tannins to mellow out.

    I’m currently drinking a CYBI Shakespeare clone as well. Although I can’t really call it a ‘clone’ any more, because I subbed in nugget for bittering and fermented with us-05. Its drinking awesome though after a few months in the keg, and I don’t want to see it go...
