as a testament to James and his crew, they signed a lease in January of 2015. Spontaneous beer is not only safe, but has been done since the beginning of beer. As for the high prices, understand what they are doing. a full year went by with zero income before they opened doors. this type of beer is time consuming, time = money. it's expensive sure, but there's reason behind it.

This is my thinking as well. The last two years especially has seen the aluminum possession obsession (fantastic phrasing by @Bdalik ) explode. The quality of Referend has never been in doubt in reading the reviews of drinkers I trust but their packaging has typically sat for a few retail days, excepting a very special blend.

You cannot blame them following the lead of Troon. For months upon months, you could stroll into the back house, get a few easy growlers, and stroll out. Once the crowlers came into commission, Troon turned into a can't miss brewery with the line extending deep and earlier by the release. The aluminum matters.

The premium prices are a direct result of the type of beer they concentrate on (and by extension, the fact that they had to begin brewing well before selling anything). It's not like they're marking up IPA cans at a ridiculous price, or spending a ton on marketing, or spending a ton on overhead because of a prime location, even... right?

There are so many breweries that one can point to that are driving prices higher and testing the limits of craft beer enthusiasm (ahem, see: one of the other recent threads about a brewery ending their Membership Program); however, I really don't understand pointing to Referend as an example of this.

These simply aren't "mega high premium prices" given the product they're selling.

but why? i am genuinely intrigued by this. is it for trading? for ease of purchase? cause people just love looking at them in their fridges? maybe im the black sheep here, but if i have a choice between a canned product and draught beer, 10/10 im going to have it on tap.

What is your source for this statement about spontaneous fermentation being unsafe? Seriously, I feel unsafe.

Also why should there be a correlation between the amount of time they've been open and their prices?

Speaking personally, convenience is a big factor. It's nice to be able to enjoy a beer when and where I want to.

random note: i found a bottle of their beer at Canal's in Lawrenceville. I was surprised to see it on the shelf!

I'm not typically a wild beer fan, but i'll try it when it's offered. And my wife thinks it tastes like feet. So needless to say, I haven't made a trip out to the brewery yet. But at least i'll get to try their beer!

That Canals had Berliner Messe (limit 1pp) last time I was in. I assume that's what you found? If so, I've had it from the cask as well as bottled. Actually preferred the bottle by a slight margin. Enjoy!

Having a Berliner Messe: Credo bottle currently. This beer is phenomenal. One of the better American wild ales that I've had.

Sanctus has more carb but I like cherrys better than grapes. Both delicious.

I didn't hear a whole lot about how the last cans actually tasted (most commentary was on the price). Can anyone chime in on what they're expecting these to be like based on the last ones? And how long they might last at the brewery?

Tasted completely fine to me, however I would drink sooner rather than later since spontaneous fermentation/refermentation can be unpredictable. I think they lasted 1 or 2 days so don't wait long if you'd like to try to get them. All the clamor on the price is a bit unwarranted as if they stuck this in a 375ml green bottle and corked it for 10 bucks, it would be considered a fair price,

    It would also last longer
