Brewing Activities? (March Edition)

    Serveral no chill cubes. Store them in the fridge until needed. Start off with the lower gravity worts and add the higher cubes as fermentation progresses. I got the idea from a 120 min clone on Bertus Brewery, I don’t intend to go higher than 14-15% ABV though. Hopefully with good oxygenation and drip feeding WLP001 should get there on its own, but I have 099 on standby if it stalls out.

    Sounds like an interesting project. In addition to being very alcohol resistant, WLP099 is a huge attenuator (and is possibly a diastaticus strain), so I'd recommend carefully considering the pros/cons of using this in a stout.

    I’d like to get away without using it if possible, I don’t want it to drop the gravity too low. Beersmith is predicting an FG of 1.022 I’ll be happy with 1.030 and I’ll only use the 099 if it craps out above 1.040

    As you might already know, but just in case you don't, Beersmith doesn't take the grain bill (i.e. the specific types and proportions of malts/grains) into consideration when predicting attenuation. This can really throw predictions off when there are a lot of specialty grains.

    Thanks I didn’t know that for sure, but have long suspected it. I think 1.030 is a realistic target. Will confirm with a fast ferment sample.

    Yesterday, I kegged a Kolsch that was hopped like Fresh Squeezed (Citra & Mosaic) and then brewed up a Nelson single hop Kolsch to add back onto the yeast cake.

    Did a modified low oxygen Oktoberfest the best i could. Had a few hiccups but the wort taste like raisin bran so i'll have to wait a while for the final outcome.
