On the basis of my only visit there over a 4-day period, I don't think you can go wrong visiting any beer-centric place. When are you going? I was there last year during late April, and I was on a quest to find Maibocks. If you are going to be there soon and a Maibock is a style to your liking I thought Klosterbrau had the best one, but the 3-4 of them that I found were all very good. https://www.beeradvocate.com/beer/profile/929/ I think we picked up a good brewery guide map at the visitor center, so go there and pick up a copy of it if they still do it.
Very walkable city. Definitely check out Cafe Abseits (went there twice). Also, you need to hit Schlenkerla. Did Bamberg about 5 years ago and it was awesome! Only place I didn't hit was Mahrs but hear it is a must. Have fun.

Thanks for the answers, we are going first week of May and stay in brauerei. Looks like the hotspots are max 20 min walk. We allways take some Belgium beers to share, if anybody is in the neighborhood...
You aren't really going to go wrong at any of them and it's a small enough town when you can reach them all on foot. If you're dedicated, you can have a beer at each one in a single day. At least if it's one of the days where they're all open. If I had to narrow it down (assuming your time is limited), I'd suggest Mahr's, Klosterbrau, Spezial, and Schlenkerla. Keesmann's Herren Pils is potentially my favorite beer in town, but it's also (luckily) on tap at a lot of different places beyond stopping at the brewery. It's literally 50 feet from Mahr's so that's certainly an easy stop to make, too.
