    I have brewed with malts from both of those malting companies you mentioned and they were highly modified.

    A metric used to characterize whether a malt is highly modified is the Kolbach Index. If a malt has a Kolbach Index of 35% or greater it is considered to be highly modified. I have a sack of Weyermann Pilsner Malt in my basement which has a Kolbach Index of 41.5%. Needless to say but this value exceeds 35% by a good margin.

    FWIW I have participated in homebrewing forum threads on the topic of locating undermodified malt. I am personally unaware nor have I read any other folks reference any malting company producing undermodified malt. Maybe some European breweries who also produce their own malts make undermodified malts?

    New Kolsch Style Sunday (Week 691)
    Greetings fellow NBSers from on the ridge in Mid Hud Val, NY. Hazy day, thick clouds darken things, then pass by to let bright sun warm earth and produce rising clouds of mist. To say that the weather here has been crazy is an understatement. Mid/upper 40's the last two nights, after an April that seemed more like winter, and three 90 degree days mixed in. Our area also had three tornadoes, which is unheard of around here, unprecedented. But there is no climate change happening. Maybe if I repeat it enough times I will start to believe it.

    Def. warm enough now for the refreshment of a Kolsch style beer, and who better than Von Trapp to provide one that is likely to be on the traditional side? Really loving this. Below picture is already ancient history, as glass is empty now, and another fill is in the offing. Von Trapp Kolsch Style FTW.

    Bottle into tall pilsner glass produces three fingers of white foam atop a light straw colored beer. Head comes down pretty quickly, but a decent cap remains for the ride.

    Aroma is mostly crackery malt that is barely sweet, with lightest lemony tart, and some hay-like hop aromas that round a simple bouquet into an alluring sensation.

    Full flavored for style, with the flavors of the aroma here, balanced well, plus light contribution of spicy noble hops joining the fun. Classic Kolsch style taste. Yummy.

    Perfect mouthfeel for the style makes this a refreshing and interesting beer that is subtle, yet full of flavor, and finishes excellently.

    Just right. Refreshing and delicious. Grab some if you see it, and enjoy, you won't be disappointed.

    I’ve had several M43s. Amazing brew. I rated the Root + Branch higher but both are world class.

    Every few months, sure :stuck_out_tongue: I’m just digging the 2018 ipa scene I guess. This is why I never give anything a 5. The ceiling keeps getting higher.

    I would never suggest that, of course. It could be a statement of how many good beer options there are out there - and that is one to grab. :slight_smile:

    T-The taste follows the nose with some hoppy flavor

    Good afternoon NBS and thanks to @cjgiant for the start today, Grey and warm here in WMass, with rain yesterday and a bit of a fishbowl today. From Lamplighter Brewing in Cambridge MA we have the Union, a 7.2% Maibock. I am sad to report that this offering was off in a few areas, First the strong vegetal aromatic, secondly an equally strong medicinal flavor thread, each added to a disappointing experience.

    Poured from a 16 oz can dated 4/25/18 into the Spaten test glass
    A - Excellent dark straw color, clarity is wonderful, typical lager carbonation of small determined spheres. The cap is linen white and frothy
    S - Sweet medium malts, biscuit, a strange vegetal element in there, no grassy or noble hop, a bit of Aspirin dominates
    T - Out of the gate, a nice balanced malt base, package print conveys the use of Pilsner, Vienna, and Munich malts. Add to the flavors a really off putting chemical taste. with a few sips this ruins the experience
    M - Medium in body, carbonation is clean, the slick feel seems to comes in next, not pleasant as it compounds with that Aspirin flavor
    O - Well this is an unpleasant offering, Initial appearance was excellent, and then down hill. I hope for another chance to try this, I will approach that with trepidation

    Good morning...or should I say good afternoon Sunday beer fans. Well I cancelled my overtime as I was stretched too thin, fixed the gutters, ran a 100 foot drainpipe away from my poor leaking foundation and just put 24 chicken thighs on the smoker. I think I deserve a beer. While purchasing my chicken I stopped and bought a 6 pack of Weihenstephaner Braupakt. It appears to be a sienna Nevada collaboration. I know nothing of the style so here we go. Pours a golden orange with plenty of lumpy off white head head. It smells like bananas, bread and Belgian yeast. It is cloudy so I am assuming it is unfiltered. Well it tastes really good. The flavor is bold with fizzy carbonation. Tastes like a bold German wheat beer with a hint of bananas and bitter hops on the finish. As I work through my first pour the head remains but I have little to no lacing. It is an excellent beer and I would purchase it again. If my description is little rudimentary again, I am really not familiar with the style but I can tell I will be expanding my beer horizons with more German beers. It is a nice change. Now it's off to clean the garage and wash my pants for next week. Have a great rest of your Sunday.

    Brewdog jet blackheart oatmeal milk stout
    ..Body is above average while it has low carbonation. Slick heavy coating on the tongue that lingers
    ..Aroma is roasted malt,smoke,char,and an earthy wood taste
    ..taste is roasted malt,licorice,smoke,char, and just a tad bit sweet..
    ...overall it's a very good oatmeal milk stout. The smoke and chat is pretty strong and may turn some people off[​IMG]upload picture

    So funny that the address listed for Root + Branch is in my hometown 5 blocks from the house in which I grew up. I think I ran into the brewer some years back at a LeBleu release too, really nice man. Am officially on the lookout for that, and all, Root + Branch beers.

    Brauhaus Riegele Augustus Weizen Doppelbock

    Like many here, I was introduced to this brewery through their impressive Sierra Nevada collaboration. Since then, their Privat has provided me much joy, and their Kellerbier has not. High hopes for this one nonetheless.

    “Fruchtig & Stark” means fruity and strong. Yes, that’s truth in advertising. Weizenbock isn’t a popular choice for US brewers, and I’m fine with that. People here can drink the real deal instead of bourbon barrel meyer lemon pepper versions.

    This one is with the best of ‘em. Good Weizen Doppelbocks are champs when it comes to putting high alcohol robust beers into a flavorful and drinkable package. This one is murky amber with a great head. It goes down easy. Banana is strong here, but it’s entirely integrated. Hops surface on the finish, but this is a yeast and malt driven beer. It’s big, but it invites swig after swig in an alarming way. Delicious.

    Good afternoon NBS, hope everyone is doing well. First up today New Holland Dragon’s Milk Reserve - Salted Caramel thanks to @FlintB! This is the first time trying any Dragon’s Milk and I really enjoy it.

    12 oz bottle, dated 12/4/17, poured into a tulip

    A- Black with a small mocha head.

    S- Chocolate, salted caramel, cocoa, vanilla, bourbon.

    T- Chocolate, caramel, vanilla, some bourbon, touch of oak.

    M- Smooth, medium to full body.

    O- A very tasty, but sweet, Barrel Aged Stout. Easy to drink, only real issue with this there is no bitterness to balance it out.

    Ok, onto beer #2, as my friend and fan of the 2018 IPA scene would say...

    This will "officially" be brewery #500 for me, it appears. I know nothing of Threes Brewing, other than they showed up in my local beer store, they are out of NY (Brooklyn), and they appear to have some contract brewing at Industrial Arts.

    Maybe ironically, their mission seems to be the opposite of what my previous beer's brewery (their website does have a few bugs in it, I can't seem to list their beers):
    My store had two offerings for sale, and I took a chance on them both. The first is a Pilsner, called Vliet:

    Pours lightly golden - perhaps a mere shade darker than my previous beer. It actually has a hint of very light haze in its body - almost not worth mentioning. The head was nice and white, but didn't hold its structure very long, and faded fairly fast to a razor thin collar. No lacing.

    Nose is a yeasty bread - almost like a sourdough, but a dry, not too well made sourdough. Now that is sort of a good thing, as the tang of a sourdough isn't something I enjoy so much in a Pilsner. Very light, indistinct fruit and grape leave or grass notes also exist.

    My first couple of sips also had that tang, but it seemed to wash off my palate by mid-glass. I might think some remnants of the previous beer if I hadn't noted the smell in a completely different glass. Taking another deep inhale, the nose appears to have cleaned up a tad as well, but there's still a little tang there.

    Hearty white bread, moderate yeast influence, and a dry grass to fruit leave bitter balancing notes, with perhaps just a few specks of orange zest. End up slightly bitter over most of my tongue, though the malt seems to hang on barely to the tip of my tongue.

    I ended up finding this a fairly enjoyable beer. I'd wish for a little more heady of a brew, and wished I was getting a cleaner nose, but I can't complain about a moderately carbonated, fairly clean, refreshing beer.

    I think this beer accomplishes the mission pretty darn well.

    Threes’ is a decent brewery, but their biggest accomplishment is their in-house bottle shop. They stock pretty much every NYC brewery, for $5-$6 a can. Hard to beat a $20 mixed-four of fresh, interesting new ipas. I go there every time I’m in Brooklyn. The Root + Branch I posted earlier was purchased there.
