New Belgium, Ska (although this might not last), Bells, New Glarus, Uinta.
Basically the places producing some level of variety beyond 5 different IPA's, pale ales, and stouts.

Shame on me, but it wasn't until I read the post from @RMW66 that reminded me that Belgian breweries were very much in-play.

That said, my vote for best core lineup goes to (and no surprise for those who recognize my avatar) Duvel:
    1 - Duvel (aka: Red)
    2 - Duvel Triple Hop
3 - Duvel Single Fermented (aka: Green)

    1, 2, 3 and done.

...and when you add to that the ridiculously limited release of Duvel Barrel-Aged, that is nothing but a bonus.

This was once an easy question to answer, before variety meant 11 shades of pale ale

    These are some:

    Weihenstephaner
    Jack's Abby
    Allagash
    Samuel Smith
    Cigar City
Sierra Nevada (providing Kellerweiss, South and Porter are not on life support)
    Bells
    Unibroue

Wormtown and Allagash for ales, Jack's Abby for lagers.
I almost always have something in the fridge from Wormtown.

Cigar City’s main beers are all outstanding, especially Guyabera, Invasion, and Jai Alai.

Outside of Florida I love everything that Trillium does, I guess you could call the Streets lineup and Fort Point their “core”

Not sure what all is actually in their "core" lineup, but I'll throw Deschutes into the mix.

Founders, Oskar Blues, Sixpoint, and Lagunitas were the first to come to mind for me. Outstanding, diverse, and consistent core offerings. I would also put Victory, Boulevard, and Smuttynose (at least as of a few years ago) on that list. And, of course, Sierra Nevada, deserves mention.

Mix of local(ish) and others for me. Allagash (I know...who would have guessed); Jack's Abby/Springdale; Boulevard. Harpoon is kind of a "go to" for every day drinkers when that's what I need.

Stone was at one time a favorite but getting more difficult to find the "core" brands, oddly enough. And forget about finding them fresh around here.

Locally, Brewer's Alley has been doing a core lineup of beers since the mid 1990's and have pretty much stuck to the same lineup of seasonal beers for many many years without chasing trends and adding much new to the table. Only new beer is Empire Usurper (properly titled) which is a hazy American style IPA. Basically these guys are the AC-DC of local brewing. And each and every one of these beers is crafted very well:

I'll have to give it to the local, regional here: Boulevard.

Pale and Wheat Ale are on tap nearly everywhere here and are both solid. Tank 7 is another classic that can be had most anywhere in town.
