    Cheers to you, sir! I've been watching a lot of Hot Ones on Youtube - it has inspired me to work on my spice game. I've been spicing just about all of my food for a few weeks now with habañero sauce, scorpion pepper sauce, or ghost pepper sauce. My stomach hasn't felt great, but my spice tolerance is definitely improving! I love spicy food, so I'm enjoying myself thoroughly.

    If you regularly hit any of the usual suspects (Barrel Theory, Wild Mind, etc.) - let me know. I'd be happy to buy you a beer and talk about your favorite local spicy food spots.

    Happy NBS, all! My first new one tonight is SN’s collab Oktoberfest with Weihenstephaner, and just like many other BA’s, I’ve been greatly anticipating it. My review’s below the pic, but I’ll quickly say here that this one met my high expectations and then some.

    My BA review-

    Look- pours a crystal clear light copper with a lively head that eventually settles to a thin coating. spotty lacing

    Aroma- doughy, crusty bread along with herbal and spicy hops

    Taste- follows the nose at first with the dough/crust and herbal/spicy, but just as the hop notes begin to take over from the bready malts, a nice light toast-like flavor comes in that ties everything together

    Feel- medium bodied with medium carbonation with a semi-dry and mildly bitter finish

    Overall- an outstanding festbier with nicely balanced bready malts and herbal/spicy hops with that lightly toasted note as an added bonus. I could drink a ton of these.

    My next new one is Windmill Brewing’s Hiveminds, sent to me by the crazy generous @bstyle. According to the can, it’s a “DIPA fermented in American Oak barrels with honey, mosaic and vic secret.”

    This is definitely one of the more unique tasting DIPAs I’ve had, and that’s a good thing in this case. In the nose and flavor, im getting some orange and pineapple, and a little vanilla (maybe the honey?), but there’s also a ton of strawberry. I’ve never experienced strawberry notes in an IPA (or any beer without added strawberries), but I’m enjoying it.

    Rhapsody is top listened band according to Last.fm, so that is saying something. Most of this list is Prog and 10+ minute songs so it's not really a true representation lol.

    Definitely not my top favorite genre, but I can't stop listening to them because of the technical, neoclassical, and progressive aspects. I would suggest checking out Dark Moor, probably my next favorite band in the same style. Also super neoclassical, from Spain.

    I find it somewhat ironic that today's intro talks about the tendencies even within this conclave to gravitate towards the Flavours of Today as it were, and to specifically call out english milds as one he doesn't expect to see around these parts. Machine House's Dark Mild was one of the stand out discoveries of the summer for me, and I randomly enough last night happened to have snagged a different dark mild, this time from Holy Mountain, with the intention of cracking into it today. Kismet.

    Helmsman is a dark mild from the masters just down 15th at Holy Mountain.

    The pour reveals a thin brown body with mild ruddy character. Reminds me of iced tea. Even with an aggressive pour I initially didn't think it was going to yield any head at all. But it does, ultimately giving over to a tight half finger that settles into a velvety coating that seems content to sit around and trace little reminders in the sides of the glass as I go.
    NOTE: second pour was much foamier. *shrug*

    Nose is the standout component here, as it brings in layers of a pleasant roastiness. Nutty with faint chocolate and caramel buried down in there somewhere.

    Flavour doesn't present quite the same depth of layers, but is still quite enjoyable if a dark mild is what you're looking for. Still roasty with hints of coffee and cocoa in the distance, the final hop kiss is grassy and almost like a white wine grape type of bitterness.
    The aftertaste is... something I can't quite put my finger on. It's sweet and very reminiscient of... something I can't quite name. Almost honey sweet in its nature, I think there's a candy bar I'm trying to remember or something. Have you ever had Crunchies? Australian honey comb candy thing? I think that might be what I'm trying to remember. Luckily I have one left over! For science.
    NOTE: I think that is what I was thinking of.

    Thin body is aggressively carbonated, but easy to drink.

    I enjoy a good mild from time to time. Give one a shot, maybe you will too!

    Great to hear you enjoyed it. There are many folks who think of Saison Dupont as the "gold standard" for what a saison should be like.
