    Troon had their first release since the 23rd. On Instagram they said they’re almost out of beer at Brick Farm Tavern and we’re contemplating shutting down. At first I thought it was a joke but looking at the replies, etc. it seems like they may not be. Anyone know any more about this? Weird.

    At the end of the comments he says it was just a bad joke. I'm sure there is some truth to it. It has to be frustrating to continue to work so hard and have your ability to earn capped.

    Based on Instagram comments it seemed they did. I think people thought it meant he was moving locations.

    Nice! I noticed it still sold out in under 2 hours. People do like themselves some Troon.

    So, is this barley wine supposed to change over time or something? (Metamorphosis)

    I noticed in the description that they adjusted the ph by adding "lacto-acidified Daisy Cutter wort."

    So does that mean "lacto" as in lactobacillus? If so, is that typical in brewing barley wines? Or just some weird hocus pocus tired hands type #dreambeer wackiness?

    Will this beer eventually be tart if you cellar it?

    Full disclosure, I really have very little clue how any of this works beyond a layman's understanding.

    Yeah, Matt said there was a huge rush but by the time I got there (~40 minutes after the post) there was no line and I actually to got to.. *gasp*... park in a parking spot.

    So a typical beer is made by putting grain into hot water to make wort. This converts starches in the grain into sugar. This process is called the mash. More grain per unit of water = more sugar per unit of water = higher ABV

    A Barleywine can be/usually is made by making a wort. Then using that wort as brewing liquor for the second mash with even more grain to up the ABV.

    Obviously there is a bit more to it then this and it probably varies everywhere. But if I had to guess this was made by Troon loading their mash tun with MO and Rye and then using wort that is used to make Daisy Cutter that has been acidified with lactobacillus as the brewing liquor.

    It's not typical of Barleywines but it isn't atypical either. Controlling the mash pH is important to making sure you get the right conversion of starch to sugar and can be done in different ways.

    It won't become more tart over time as any living lacto that remained was killed during the 4 hour boil that he mentioned - or before it even got to Troon if it was being used for pH control. However, it will become more malty over time as the hops fade.

    Thank you for the detailed explanation.

    I've brewed a few extract batches in my day, so the basics of brewing aren't completely lost on me.

    That said, the mention of lacto paired with the beer's name had me going, "hmmmmm..."

    I didn't have much more than like 2oz of it but there is no sourness, that I could taste like that. It really just tastes like a good west coast IPA. No real booziness or anything like that.

    Awesome to see Troon branch out a little bit with this one, without going full-on Tired Hands.

    I was really impressed with the bottles I've had from them, the grisette especially was fantastic... the golden ale was only "good" but both beers showed a willingness to explore in a nuanced, premeditated way as opposed to the "bigger is better" or "fruit or adjuncts solely for the sake of the Gram description" that's becoming ubiquitous.

    Man, I just went on IG and saw Troon had another release today. 450 crowlers sold out in less than one hour at $14 a pop at 3per person. This dude is doing well!
