I've never had the capability of spending more than 3 days in Bamberg.
I think 5 would be ideal so you can space out the breweries and your food options. There have been dishes almost everywhere that I wanted to try, but I can barely handle 2 meals a day.

A couple of years back we did 8 nights, would like to do 2 full weeks or more. So much to see and do.

I realize that not everybody can do this but every other year or so I do 2-3 weeks in Bamberg. I bring my bicycle (packs into a suitcase) and ride around the countryside visiting breweries and kellers. And if it looks like rain, well just stay in town  You really do get a different perspective on things...

Yes - Rothaus is a great stop. It's fairly remote, so you'll need a car. Waldhaus is another one nearby that is very good, albeit more modern. We also loved Zoller-Hof in Sigmaringen if you are headed through that direction

I just saw this thread and am coming to the party a bit late - lots of good suggestions out there. Since I live in Munich and conduct history & beer tours throughout Bavaria, I'd like to comment on a few things I read in the thread about the various beer stops, driving in Germany, and AirBnb/Hotels.

Everyone here has covered many of the best places to enjoy the beer and none of the advice is at all wrong. My input is only that it is your chance to explore some of these beer styles in their purest form and this a small taste of my favorites in Munich:
    • A fresh Schneider Tap 7 Original on a Sunday morning at the Weisses Brauhaus while enjoying Weisswurst and tapping to the music. And, of course, an Aventinus in the mix too. Ger in by 9:30 - music starts at 10:30.
    • A Mass of Hofbräu sitting at the Englischer Garten Chinese Tower after watching the surfers on the Eisbock.
    • A Half-liter of Paulaner Weissbier while sitting next to the lake at Seehaus as the sun goes down.
    • A raucous night at the Augustiner Bräustuben enjoying a fresh halbe of Augustiner in a Willibecher (a Maß is only prefer when the service is slow)
    • A day trip to the Holy Mountain to enjoy the Doppelbock and Schweinehaxe at Andechs - perhaps followed by a boat ride on Lake Starnberg.
    • Obazda, Rotisserie Chicken & a Mass of Pilsissimus Exportbier at the Forschungsbrauerei
    • Hanging out with the locals at the Bier & Oktoberfest Museum while drinking Augustiner - the Munich Schnitzel is a great choice too!
    • Bratwurst with horseradish and a Riemische while drinking an Augustiner from the wooden cask at the Nürnberger Bratwurst Glöckl am Dom, followed up with the best Kaiserschmarrn in Munich.
While I was sitting at my Stammtisch at Schneider, I overheard a young American man complaining to his girlfriend that there were no IPAs to be found in Germany. Stupidly, I engaged him in conversation and tried to explain to him that he had the world's best example of Weissbier in front of him - in the most traditional of bavarian environments and he should rejoice at his fortune. He didn't see it that way and I sent him to the Tap House to drink an IPA. What a loser.

Hotels and Airbnb: Munich is doing its best to stamp out AirBnB and short term rentals in the city. It's a taxation issue but also the feeling is that these kinds of rentals lead to higher monthly rents for the locals and prices them out of their city. The rules keep changing and this is the rub - perhaps your confirmed reservation can't be honored. So, be careful. (BTW Uber is also pretty much a no-go here too)

Driving: Driving is serious business here and getting a license is much more difficult (and expensive) for a German. They drive fairly aggressively and they expect other drivers to know and adhere to the rules. Don't assume you know the rules - do some research before attempting to drive here. Here's a place to start: https://www.german-way.com/travel-a...ope/driving/autobahn/driving-on-the-autobahn/ It's probably clear, but don't drink and drive - not even a little!

    Viel Spaß!

Even the ugly American evolves in his own way.

You should have called one of the Schneider waitresses over to "school" him.

    @BayernTrips

Thank you so much for all the great information!

Do you offer tours on June 8, 9 or 10th? It would actually be awesome to have a tour with someone that can show us the best of while in Munich for the first time!

My wife and I were planning on doing a tour at Ayinger but that looks to be nixed due to time. Would it be worth going to Aying to visit their gift shop and beer garden? I'd hate to waste the time if the restaurant in Munich would suffice.

Flying to Germany to (amongst other things) visit Europa Park? In June? Despite the inevitable autobahn Stau? And the massive crowds of people at the park?

    Kein Danke...

I'd much rather enjoy one the many biergartens in the Schwartzwald than deal with that situation. But, hey - I wish you much joy and luck.

I love their biergarten. Also would recommend a trip to Andech's as well. The scenery around it is stunning.

Being used to Disney, Universal Studio's, Cedar Point and many other huge parks here in the US, crowds don't phase me! We are also staying on site, so we will have early entry which will help... And getting to the park from the on-site hotel shouldn't be too bad

And two days at Europa, so we should get most of what we want done in that time. Other friends who have been around that time said it's no issue at all.

As far as traffic, i'm used to driving (or sitting in jams) in San Francisco, LA, Atlanta, you name it. It is what it is...

Being that amusement parks are another huge hobby of mine (equal to beer probably, we often combine our trips around the US for both, along with zoos!), they are equally as important. Plenty of parks to visit, plenty of breweries... Should be a good time.

I'm going to piggyback on this thread as I'm now planning a trip to Munich/Bamberg/etc. for July or August.

What's the Munich S-Bahn like right now? When we were last there (2017), there were large chunks that were shut down thanks to construction. Both Aying and Friesing were basically day-trips thanks to closures and lots of bus transfers. Is is mostly back up and running normally? Anything else unusual that I should be aware of?

Right now, they only have the constructions plans through the end of June: Click Here
Mostly, this stuff is happening at night:
    Nächte Mo./Di. bis Do./Fr., jeweils 21.50 bis 3.50 Uhr
Nights Mon/Tues until Thur/Fri, from 21.50 PM to 3:50 AM

At the moment, things have been working quite smoothly, but August is considered the perfect time to do these things since so many locals are away on vacation. You can also see nationwide construction underway here.

Starting on 15 December 2019 there is a total overhaul of the tariff system in city. So, be ready for some big changes!
