    We’re looking at this all wrong. Villa Park was probably getting upset about all the lines and hoards of neckbeard zombies tearing through town after 10 pre-Noon drinks.

    I bet they got rid of him to exorcise the hype demons.

    The people who want to minimize Shaun's impact on More should provide us with the list of all the breweries that open as 160 seat restaurants that are open 7 days/73 hours a week. Yes the area needed it and their ability to secure a loan for that scale was aided by them owning multiple businesses in the area already. But to act like his following didn't help make it happen is odd

    Their local competition was Buffalo Wild Wings, Applebees and Twin Peaks....they could have filled the place on the merits of food alone....

    Lol, you jest but, I'm sure the only reason Eric took the job was because he was guaranteed to get some Henna as those lines are no joke..

    True, but I do feel like this is kind of an over reaction. More will be fine.

    Can you name the all the brewers, Revolution, Hlaf Acre, Pipeworks, and Three Floyd’s Have had throughout the years?

    Once it gets to the point where you have a base of solid beers, the operation kind of runs itself. Yes, there will always be room for improvement, and some beers will be better or worse than others, but at least for the Villa Park brewpub, the beers are still going to be very similar to what they always were. Do you think Shaun was the only one that brewed?

    Shaun is/was a great brewer at More, but it was also very much a team effort, and the rest of the team didn’t suddenly forget how to follow the exact process they’ve been following every day for the last 2 years.

    Yeah... anyone that has brewed beer before knows that once you get the process down, have consistent ingredients and equipment, it is not hard to produce what you want. The hard part is getting there the first time.

    Beer is science once you have a recipe, and they have plenty. You can over cook a steak. You can’t screw up pressing a button on a machine.

    Brewing DDH dusty at this point is basically making a package of ramen. All the ingredients are ready to go. You just have to follow the directions on the bag.
