    Thank you for your insight.

    I definitely over simplified it, but my main point is that I think it’s really disrespectful to an entire business/team to treat the Head Brewer as the reason for the success and that without Shaun, the staff that is left behind is basically brewing with a Mr. Beer kit.

    There’s no doubt Shaun is a very talented brewer, and knows what he’s doing. I’m super excited for phase 3.

    But let’s not go nuts. He brews beer. With time and training, a great number of people can brew really excellent beer. All it really takes is training and a solid work ethic. There’s no “touched by god” gene.

    Matt Young is (or maybe was) the head brewer at Half Acre. I honestly have no idea. But he’s wasnt the first. Turns out Daisy Cutter and Big Hugs were excellent beers when he was cleaning out bright tanks, and they’re excellent beers while he’s overseeing a massive operation across 2 locations.

    That’s a testament to the team that is in place, and the shared knowledge at the work place.

    Let's not fool ourselves. That is double speak for larger market = more money. I highly doubt the system they are brewing on is going to solve their supply to demand problem. The lines will just move from their front door to that of their retail partners.

    Paul Prudhomme was the original chef, not Emeril. Your analogy is right but your reasoning is wrong. Each successive chef took what was done in the past and then put their own spin on it. Paul started it, Emeril made some of his own changes while keeping some things the same. Same thing with Jaime Shannon and now with Tory McPhail. The beers at More should be the same to start but will eventually have the new brewers spin on them.

    Matt Young is the Director of Brewings Ops for the entire company.

    They really are. The quality of beers coming out of HA is phenomenal!

    But my point is they are Half Acre Beers. Not Matt (or Eric, or John, or Lisa - all names made up) beers.

    Clearly. Shaun made a name for himself amongst beer enthusiasts because of what he did at RAM - being a chain, nerds needed a way to distinguish the beers coming out of RAM Schaumburg (and probably needed to justify chasing beers from a dated suburban brewpub).

    I’m in Denver and had a collaboration between New Image & More called Meet the New Boss. Stout with cinnamon, chocolate and vanilla. Pretty good.

    I'm glad someone said it (and in much more detail than I would have I'll add) Guys on this thread make brewing beer the equivalent to an easy bake oven.

    This is why I don't home brew. The variables of trees taking out power lines is just too much for me to manage.

    I agree with your general take on lines, but this is just gonna trade lines on the prairie path for truck chasers across the city.

    No. It’s a job, and like many jobs, it needs your attention.

    But if John Kimmich and the guys at Alchemist can teach random people with no prior brewing experience how to brew Heady Topper, Focal Banger, etc, the im confident its less about talent, and more about work ethic and experience.

    That’s not my argument.

    My argument is more akin to would I be able to brew someone else’s award winning home brews once they showed me how they do it.

    I’m saying that with time under my belt practicing, I could do it.
