Ascension One Thousand Voices NEDIPA. This was fantastic. Unique opaquely hazy dark green/reddish color, it uses raw sugar cane and raw wheat. Fantastic lasting rocky head retention/thick foamy lacing. Aromas and flavors of huge peach, plum, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, guava, tangerine, red grapefruit, lemon, lime, blueberry, gooseberry, strawberry, white grape/wine, wood, citrus peel/zest, and light peppercorn/pine hops; with moderate wheat, cracker, biscuit dough, cane sugar, and toasted bready malts; with herbal, floral, grassy hop earthiness. Light pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness on the finish. Medium carbonation and medium-full body; very creamy, silky, bready, grainy wheat; some sticky hops, and light resins/rinds in the mouthfeel. Lightly increasing lingering bitter dryness; no cloying/astringency. Very smooth/soft, not aggressive, minimal warming 8.5%. Fantastic huge varied complexity from Nelson, Citra, Belma and Columbus. Tons of tropical/stone fruits. Extremely juicy and fairly dank/earthy hops; with a nice sized sugar cane and wheat/oat/malt backbone. Light residual sweetness with lingering resin dryness. Spot on stuff! 4.23

Next new beer is Allagash Coolship Resurgam. Pours a nice murky orange with little head. The nose is sour, with some wheat and orange. Really nice! Taste is sour-dominated, with cherries, lemon, and other citrus. The mouthfeel is somewhat dry, which was expected. This is a fantastic beer! Overall = 4.25

Dualism, a Saison by American brewery Tired Hands, aged in Vin Santo barrels on peaches (5.3% ABV).

Pours a mostly clear, pale golden, straw coloration with a small, fizzy head that soon fades to nothing. Smells of biscuity malt, with a strong white grape presence and ligher notes of peach, citrus and just a hint of earthy oak.

Taste is dominated by vinous barrel notes more so than the peaches, with a distinct, slightly sweet, semi-dry white wine character and notes of white grape, earthy oak and light tannins, as well as tart peaches, some citric acidity and just a hint of hay and estery fruit: green apple, pear, gooseberry and very light funk coming through as well. Finishes crisp and semi-dry with a light tartness and acidity and some white grape, peach and oak lingering in the aftertaste, Smooth, effervescent mouthfeel with a medium body and carbonation.

This has quite a distinct white wine character to it, with the white grape presence almost overshadowing the peaches and nice accents of earthy, oaky tannins, as well as a good balance of equally light tartness, acidity and funk, with the citric acidity probably standing out the most, being rounded out by some estery notes and a nice, semi-dry feel to it.

Next up is one from @brutalfarce aka soda robot.

    Beer: Fudgie the Beer
    Brewery: Captain Lawrence
    ABV: 6%
    [IMG]
From a 16 oz. can into a Willi Becher style glass, this beer pours out coffee brown, settles in black with minimal highlights and forms a finger worth of caramel colored bubbles to rest on top. No lacing.

The nose carries in huge fudge. Chocolate fudge and fudge brownies along with a hefty background of ice cream and lighter notes of caramel and vanilla.

The taste comes in with that chocolate before turning into a quite roasty presence, almost coffee like and the sweetness reminiscent of ice cream. Makes it similar to eating a brownie edge piece covered with a scoop of ice cream while having a cup of black coffee.

The body feels pretty hefty, in my opinion. I would only put it at medium bodied, but for the 6% ABV it’s more than you usually get. Roastiness lingers throughout and ends up creating a dry finish.

Overall, this is a fun collab beer with an ice cream place. I enjoyed the aspects of it and think they got what they were going for.

Thanks for the chance to try this William! It was a fun beer.

    Cheers NBS!

One more new beer for NBS and this one is courtesy of @CanConPhilly. I've enjoyed many Tired Hands beers, but have always wanted to try one of their milkshake IPAs. Big thanks to Matt for the opportunity!

Beautiful in the glass, with a translucent bright yellow color and a medium sized frothy head that left splotchy lacing. The aroma was dank pineapple, if that makes sense. The pineapple was bright and clear on the palate. It was ever so slightly tart which worked well with the appearance of sweet lactose. The slightly dark underbelly stepped forward on the finish. Full bodied and creamy as expected. Overall outstanding. Thanks again Matt!

Mikkeller SD Chill Pils. This was excellent. Lasting rocky head retention/thick foamy lacing. Aromas and flavors of big lightly tart/tangy lemon, lime, orange, grapefruit, citrus peel/rind fruit; with moderate cracker, white bread dough, lightly toasted biscuit malts; and wood, peppercorn, herbal, floral, and grassy hops. Light-moderate pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness; and light fruit tang/tartness on the finish. Medium-plus carbonation, light-medium body, and moderately crisp/clean finishing. Balanced bready/grainy malts, sticky hops, yuzu resins/rinds, and light acid/tang in the mouthfeel. Moderate increasing bitter dryness; no hop/fruit astringency. Very flavorful/refreshing, not watery for 5.1%. Very clean lagering, minimal fruity/yeasty notes. Awesome balance of vibrant yuzu citrus, clean pils malts, and earthy noble hops. Minimal residual sweetness with crisp dryness. Really big fan for the style. Not overwhelming on any aspect. More of a German pils than the Bohemian listed on the site. 4.03

This is a really creative and interesting beer. The review naturally contains my full thoughts, so I'll give the Cliff's notes version here.

In short: lots of vanilla, both on the nose and the palate. The berries are a touch more sweet than tart, in particular on the nose. On the palate, the berries and the vanilla don't quite match up - it's a very tasty combo, but imperfect, if that makes sense. Almost all of the "sourness" comes right from the berries, with very, very light tannins, mild vinegar sourness on the finish, and some rustic hay up front.

I can't help but feel this would develop quite a bit more sourness if given the time to develop in the can; this one is only about 2 weeks old.

Not everything jives perfectly, but it's ultimately super tasty. Really, really damn good, in fact. I wouldn't be surprised if some time to develop - not long, mind you, just enough for some souring agents to get to work - would result in an even more impressive beer.

    Kern River Chuuurch!

I just flew across the country from the East to the West Coast. It's been a long day and I stopped in at the nearby Whole Foods before checking into the hotel. Ready to relax but I wanted to share this quick review. I haven't had many Kern River beers but I've always been impressed. This one certainly didn't disappoint. I gave it an overall score of 4.28.

Had this in Downey, CA from a 12oz can with no date but reportedly fresh from Whole Foods.

A - Pretty clear gold with a 2.5 finger white head and good lace

S - Like sticking your nose into a bucket of fresh hops. Dank/herbaceous and ripe pineapple

T - Biscuit, light caramel, pine, citrus, pepper, surprisingly not dank. Old school West Coast style. Yum.

    M - Medium body and Light-medium carbonation.

    O - Somewhat akin to Racer 5. Suits me to a T.

    Good evening, NBS!
As a lark and in the name of experimentation (but mainly because I am comically impatient), I've decided to taste a Kviek IPA that I brewed recently with random new fangled hops (cashmere and loral) and that I mentioned in another thread to @JackHorzempa I was on the fence about waiting longer but I saw @Shanex's cashmere Duvel and decided to go for it. I also figured I might as well share what I hope resulted in drinkable beer despite (or maybe because of) the harsh conditions it was fermented in. Since everyone says it is quick I guess we might as well push it!
I figure I can sneak this one in real quick since it'll probably be so young/harsh still that I dump it, but who knows. Everything I read about this yeast tells me that my preconceived notions are wrong so maybe I'll have to eat my words, or in this case finish my beer.

This was my first try with this type of yeast and I am curious about how it is so far. I am sure it is green and might even be gross still, but I just wanted to give it a try to check the carbonation and see what it was like so far since it supposedly has a really quick turnaround time. This is from a small batch, fermented in the mid 90s atop my water heater. It finished fermentation in 2 days (as I read it would) and, aside from hop burn, tasted okay at bottling around 5 days ago. I kind of drug my feet on it, but really if I had been quick and assuming it is carbed it could be ready in around 8 days. Let's see if the taste gets ready that quick though...
    It is surprisingly decent!
Cloudy Orange with a big white head. Aroma of sweet citrus and some bready malt with some woody/green resinousness going on too. The flavor is fairly bitter with some of the same things going on. Pretty clean with some light fruity esters that seem to prop up the sweetness of the hops. It kind of tastes and smells like an orange popsicle that fell on the forest floor. Not at all bad. Especially considering that it will improve over the next couple weeks. As per usual I wish the nose popped more but so far in my short time brewing that would seem to be a common theme with hoppy beers and I won't lose sleep over it as they are not my most desired styles to brew since I can get better locals than I can make.

    Bonus pictures:
I also tried drying some of the leftover yeast and will see how it fared at some point down the road. Supposedly it can last over a decade in a freezer this way. I'll try to get to it sooner than that though.

Hope your glasses are full. Cheers!

Sierra Nevada - Hoptimum, 2019 Edition

Continuing in my pale ale and/or Sierra Nevada theme comes this beer. I’ve had Hoptimum before but not this “reimagined” version.

It’s an attractive bright copper. Tastes resinous, bitter, fruity (orange pith, apricot), sweet, and sticky.

From @AZBeerDude72. Dragoon Sarcosuchus DIPA. Not even sure how to pronounce that. Anyways this was fantastic. Lasting rocky head retention/thick foamy lacing. Aromas and flavors of huge tangerine, red grapefruit, lemon, lime, peach, pear, pineapple, passion fruit, mango, honeydew melon, red apple, berries, citrus peel/rind, wood, onion, mint, black tea, peppercorn, and pine hops; with moderate cracker, white bread dough, biscuit, light honey/toasted malts; and herbal, floral, grassy hop earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness on the finish. Medium carbonation and medium-full body; balanced creamy/bready/grainy malts, and sticky/resinous/rindy hops in the mouthfeel. Light-moderate increasing bitter dryness, no hop astringency. Dangerously smooth, nicely soft, not overly aggressive, mild warmth of 9.6%. Fantastic Apollo, Simcoe, Amarillo, Pahto, Calypso profile. Extremely juicy, vibrant, dank, and earthy hops; with nice sized honey and bready pale/Munich malt backbone. Light residual sweetness with lingering resin dryness. Not overly sweet/heavy for the ABV. Wonderful west coast style for sure. 4.23

Kismet can be a funny thing sometimes. That sounds like a wonderful experience to lay your mom to rest and I'm glad you guys were able to honour her wishes like that. I'm sorry to hear about Vida... I remember talking about how much our dogs mean to us as we were sitting at Chapman contemplating life and it's various vagaries and inlets and it's never easy to say good bye, doubly so when it's so early and unexpected. I'll be sure to give Porter some extra skritches in her name. Thanks again for the bottle(s), and cheers!!

    Eat a Peach."
Moderate to vigorous pour yields a one inch white head over a slightly hazy, light golden body with some lacing. Nose of a bit of peach, the tiniest bit of citrus, and the slightest bit of funk. Taste mirrors nose somewhat with a finish more on the dry side after a semisweet ride. Definitely a peach pit kind of thing with a bit of spice as well. Refreshingly interesting, to say the least. Feel is a tad thin, and overall, would recommend and have again. Cheers!

BBA Old Rasputin XXI, an Imperial Stout aged in Bourbon barrels by American brewery North Coast (12.2% ABV).

Pours a pitch-black coloration with a huge, creamy head. Smells of roasted, caramel malt and dark fruit, with some chocolate, vanilla, bourbon and charred oak coming through as well.

Taste is dominated by roasted, caramel malt, dark fruits: fig, raisin, vanilla and tobacco, with lighter notes of dark, bitter chocolate, coffee, molasses, licorice, bourbon and charred oak. Finishes with a medium bitterness and some roasted, caramel malt, dark fruit and tobacco lingering in the aftertaste. Full mouthfeel with a rich body and medium carbonation.

This is a nicely balanced Stout with a rich and complex flavor profile that has some quite bitter, roasted, charred and sweeter dark fruit and vanilla notes to it, as well as a good bourbon-barrel presence that never turns too boozy, although it does suffer a little in the mouthfeel department. Not even remotely worth the ridiculous price though.

    look: 4 | smell: 4 | taste: 4.25 | feel: 4.25 | overall: 4.25

Poured a 2/6/2019 16 ouncer into a DFH tulip. Nice rich blackish brown body with a small tan head that dissipated quickly except around the edges and above the etched fish in the center of the bottom. Smell at first was hot boozy vanilla but after it warmed up started detecting coconut and brown sugar. Taste was remarkably smooth for 13% with no risk of coughing jags. Again mostly tasted vanilla initially but upon warming the coconut became apparent on the back end. Mouthfeel was full without being thick. Nice imperial stout; I hope I can find another for cooler weather.
