    the candles, to my knowledge, have always been served still and served draft only for anniversaries. i’m guessing it’s the 5th year in the Cellar but they were a brewery a year before that without a location(operating out of Perennial)?

    Always still & draft only, they've occasionally popped up on draft on non-anniversary occasions. I believe 1 Candle was when the cellar opened in Nov 2014, so that would be 5th anniversary = 6th candle.

    Is there a reason why the tradition has been for this beer to be served still?

    They've been doing a lot of maple lately (and they have all been great)
    Excited to try this one, I had 4 and 5 side by side last year and they were both great.

    Not personally sold on still beers myself but they are so good I would never complain

    "If you have had the chance to stop by The Side Project Cellar over the last two and a half years, you probably know I am a fan of still beer. I have released several draft-only still beers - The Candles Series and Foedre Beer. I spend a lot of my time drinking beer from the fermenters, from barrels and from blends in brite tanks, so I wanted to start sharing my appreciation of what beer can offer without carbonation. We knew drinking still beer was something new for most beer drinkers so we chose to serve them exclusively on draft at The Cellar so our our staff could explain my intentions, share the reasons and nuances behind serving a beer this way, and field any questions that customers might have."

    Short answer is that Cory loves still beer.

    Does it mute flavor though, particularly in something heavy like beer? Is part of the point of carbonation to help aerate and lift up flavors more?

    Although, I will say their overwhelming viscosity can get in the way.

    Hell and no. The Candles have always been my favorite of any of the beers SP puts out. As 2 Candles still is my all time favorite, I can't wait for this one. See everyone tomorrow!

    What an absolutely incredible weekend! The quality of beer flowing and the way the staff manages the chaos is first class. I’m amazed every time I attend an event like this but I guess at this point I shouldn’t be. Can’t wait to do it all over again in 3 weeks!

    I was talking to Corey at Zwanze day about Morning Vibes and he said then that they will be doing lots of Maple beers for the next year since they over estimated how much maple would be necessary for blending into Vibes. It was pretty funny how almost embarrassed he was to admit they have barrels left of the syrup. Nice problem to have I guess!

    Maple Syrup du Pays, Merci Maple Syrup and Saison du Fermier aged in Maple Syrup Barrels all on the horizon.

    I'd also just settle for buying some of the BA maple syrup on its own!
