hello, I am hoping to keg my beers ( 2 or 3 styles) in 2.5 gallon torpedo kegs and store them at room temp because I don’t have any extra room. Should I carbonate before storing- then ice them down in a sink- then serve? Will this be ok? Will it effect the beer flavor? Or should I wait to carbonate and force it the day before serving?
You should carbonate your beer cold and serve cold. It is difficult to get the vols correct if you apply pressure to warm beer. Once properly carbonated you can let homebrew sit ambient for a while but the dissolved CO2 is going to leave the beer and enter the headspace. So, do not vent the keg. Get it down to serving temp at least a day before you plan to pour. This will get the CO2 back into liquid where it belongs. Cheers
