Most Creative Minds in Craft Brewing

    OK, discounting that whole "beard beer" thing, who are the brewers that are consistently doing creative things with water, barley, yeast, hops, etc.? Sam Calagione is obviously a no-brainer, but I'm suffering from a Left Coast bias and most of the names I came up with were from Mountain/West Coast time zones. Need some other perspectives.

    They aren't always as good as the hype, but I have had some great beers from the "gypsy" brewers: Mikkelller, Evil Twin, Pretty Things, Stillwater. (I apologize if that's what you meant by "beard beers." I'm not familiar with that term.)

    Look up the guys at Fullsteam Brewery in Durham, NC. Ive only been here a year, but Ive seen a sweet potato lager, Belgian using Cheerwine soda syrup, PawPaw fruits, foraged figs, corn grits, and local pepper (in a Wit), Lemon Verbena, and Sage.

    Throwing a bunch of random fruit, spice, vegetables into a brew isn't really creative to me. It's the trendy thing to do.

    As a homebrewer it's kind of the way you think when you see any interesting ingredients at the grocery store, "I wonder what that tastes like and what type of beer i could brew with it?"

    Yeah, Jester King is doing some pretty interesting stuff. I've only had a few of their beers, but just looking at their website I was impressed by the kinds of things they are doing.

    I too have the Mountain/Western bias, so I cannot really comment on the Midwest and Eastern people, but have to give credit to Crooked Stave. I feel like their beers are creative without being gimmicky.
