More Brewing (2020)

    You've got a better tolerance than me, and I love spicy food. I refuse to even try anything above the hot.

    So, I try to stay up on this thread, but somewhere along the way I often lose my place. Somewhere this past year, i apparently lost my way, and just saw that shaun is gone, I guess?

    Didn’t Shaun leave ram, or something like that, to open More? What the hell happened/is going on?

    Shaun & Evan (GM at More, was formerly at RAM with Shaun toot) left More in March of 2019 in March last year and started Phase Three (contract brewing out of Lake Zurich Brewing). Think their first release was in April or so. Seems like most of the statements around the time were around differences of opinion about More's expansions, presumably wanting ownership was also a factor.

    Thanks! That’s how I missed it - I was pretty much off BA entirely from around Dec 2018-June 2019. That definitely explains it. I actually tried going back and looking through the thread to find where I missed it, starting mid-summer, but never did locate it. That explains why.

    Not to sound judgmental, but at that point wasn’t MORE only open, like, a yearish? More power (pun not intended) to shaun for twice now going out on his own, but how exactly does that happen? Sucks. Guess the name Phase 3 makes a lot of sense.

    He didn't go out on his own until Phase 3.

    There was a fallout with owner(s)/partner(s) is what people speculated. Hence him leading to start Phase 3 with Evan.

    I am amazed at what this brewery has accomplished in a relatively short amount of time. They still have lines for random releases, tap room always busy and/or packed, IPA's and stouts are almost always on point, massive 2nd location about to open and one of the few breweries to integrate a full food menu worthy of a restaurant. Well done More, well done.

    impressed that they have kept it up for the most part post-shaun, as he drove all the hype to begin with

    Yes, bringing in a brewer that brought hype with him definitely paid off for More. And honestly, I find the quality to be pretty equal to when Shaun was there. The IPAs are generally about the same. I don't like Marbles and Frooted as much now (too much vanilla), but they're still good. And I'm not even worried for what happens when they run out of Shaun's stouts, because <looks around> <whispers> I like Arketype better than Henna anyway.

    I think they're pretty well established in the downtown. I doubt people following the beer hype is that much of their business now.

    I heard it was only to the corner at around 15 minutes until open.

    Marbles is solid. Tart fruit, creamy, plenty of vanilla/lactose presence. Peaches are there though I can see why some want them more prominent. It’s good though a very different beer from the original strawberry/blueberry Marbles beers

    I know. IMO there hasn't been a drop off at all. I admit I was initially in the camp of "More is totally screwed" when Shaun left. So it seems there are plenty of successful breweries in this state that don't employ Shaun.
