Honey in beer

    Adjunct refers to a fermentable ingredient not derived from malt. How hard is that to remember?

    Fibonacci Brewing in the Cincinnati area keeps their own bees for honey used in their very flavorful beers.

    Not really, honey and lactose are used very differently when brewing beer. Honey is a simple sugar like table sugar and will completely ferment out of a beer. Simple sugars like honey are used to raise ABV without having to use more malted grain. Sugar/honey will also not effect the color, mouthfeel, or sweetness of the finished beer.

    Lactose/milk sugar is a complex sugar that will not ferment with brewers yeast. It remains in the finished beer and adds a fuller and silky mouthfeel and some added sweetness and creaminess.

    Braggot is more like a mead beer hybrid as opposed to a beer with honey added

    From my understanding a braggot has over 50% of its fermentables come from honey.

    Thanks, I just remember Sam Adams made one back in the day called a Honey Braggot and as much as I appreciate honey in beer I hated that particular one.

    Icarus Kalashnikov is an Imperial Russian Stout brewed with Clover Honey. It is fantastic.
