Do hops fade?

    Here's a quick question in the cellar staging of beer. We know that spices tend to round off as does the burn of alcohol. But do the hops and flavor mellow? I'm thinking of the big beers like DFH 120? I'm considering aging one or two bottles of Bolt Cutter.

    Yep. Hops will most definitely fade

    I believe some age would do Bolt Cutter well....

    Yes, hop flavors and aromas do fade over time. Some varieties more quickly than others.

    120 is not very hoppy, its boozy and hot

    Yes the hops will fade, look up all the discussions regarding the freshness of IPAs.

    Also, in most cases spices do not fade as far as I am aware.

    If a beer has greater than 8% abv the hops are preserved and likely to not fade.

    Yup big time. In my experience, their bitterness tends to have a strong foothold, but the aromatics are the first to go with flavor to follow shortly there after.

    Sure, at first glance, this might seem like a question easily answered by thousands of threads. . . with a resounding, "yes". . .

    But isn't it a little more complex than that? Do the hops really "fade" or do they maybe more accurately "change"? If they "fade" where do they go? The bottle is sealed right?

    Some beers are hoppy still months, years later. They taste "different" but the hoppiness is still there. I think especially with all the new proprietary hop varities, those flavors definitely change quickly. . .

    Anyways, while I'm prolly dabbling in semantics a bit with fade/change. . . I think the thread could use a little more discussion on this matter.

    I like what flayed and skinned said though.
