Aging Sours

    What is the ideal time to age sours? I have a bunch of 3 year old jolly pumpkin. Drink now or wait?

    No idea but 'drink now' does always lead to a good evening.

    I've had a bunch of jolly pumpkin with age and to me they've all been good but none were ever quite as good as they were fresh. That being said, I'm sure they'll all be quite tasty when you open them.

    Does aging sour beers make them less or more sour?

    Depends on what Jolly Pumpkin beers you have.

    i have a friend that swears that aging lost abbey red poppy for a few years radically improves the beer. have never held onto a bottle that long but now i'm curious to give it a try.

    I do like Red Poppy at a year. Is it better? It's different. Better to me though.

    Some sours age some don't. Some sours are bottled young and need a little time, Surly 5 and The Dissident are great examples. Although Dissident drinks so damn good young 6-9 months make it turn heavenly. Surly 5 young was so sour, but a year turned that bad boy into amazingness.

    I like Red Poppy okay, but it was certainly better after a year in the cellar. To me anyway.

    I cellared a bottle of Duchesse for two years and it did NOT improve. It came out tasting a bit like cider which was weird.

    In my experience Jolly Pumpkin ages pretty well. I'm sort of scared to open my bottle of La Parcela from last year, but Noel with a year or two on is is way better than it is fresh. Drink 'em up!
