    It is Rafters: Cherry from Afterthought Brewing

    Described as a mixed fermentation sour ale brewed with aged hops, aged in an oak barrel, and refermented with Michigan-grown sweet and tart cherries.

    Sounds wonderful. Would love to try that. Hadn't heard of that brewery. In Illinois, I see.

    I have not heard that fermentation with brett generates more carbonation, and thus foam. I'm dubious, but always open to being educated. Got any links that explain that?

    I actually drank it blind earlier today, I didn't know what it was when I was drinking it. My brother is visiting and and brought the bottle and did the pour behind my back. I thought it may be a kriek while I was drinking it. It was a great beer and I had never heard of the brewery either; they seem to be a very tiny outfit that does small batches. I'm glad I got to try it.

    I get thirsty just looking at that pic. That's a backyard campfire nightcap beer if ever I've seen one. A stogie with it would be great too.

    I have had a number of these out by the fire pit with a good stogie. This stuff drinks beyond smooth for 12.5% ABV.

    Sadly, I had a hard time cutting it down to just these...and it made me wish I hadn't stopped using my DSLR for routine beer photos...

    Simply anecdotal, but the above pictured orval shows the head I typically see with Brett beers

    Straight Lambic, fermented with brett, is a lightly carbonated beer. On the other hand Gueuze, which is a blend of Lambics, is highly carbonated. Orval is bottle-conditioned, which produces higher carbonation. I assume brett is not the priming yeast used for the secondary fermentation in the bottle, but I can’t say with certainty.

    Most beers that I have encountered that used brett in the brewing process have a head that appears different than most other beers. Carbonation levels obviously impact head quantity, but I am speaking more towards the physical characteristics of the head.
