    Brewed 10 gallons of my summer lager on Monday. Happily fermenting away now.

    Checked the SG and added 96 oz Vinter's Harvest Raspberry Wine Base to the dark ale. I think I'll check in on it in about 2 weeks to evaluate flavor and mixing ratios with my sour.

    I got a request beer to make. Chocolate raspberry stout.
    I got the chocolate part down, but still experimenting with raspberries. Any thoughts for a 5 gal batch?

    Raspberries are one fruit that really comes through in the final beer. 1 pound per gallon in secondary is usually plenty for me for a mid gravity beer.

    Thanks, would your mid gravity b in the 6.5 range cause that's where I was gonna dial it in. I'll drop it some if you think the raspberries will shine more.

    Referred back to my notes, og was 1090 but I topped off with some HLT leftovers and hit 1075 before fermenting.

    If you play it right you can get fresh quarts on sale for cheap. Maserate, pasteurize and add. But yeah it can get pricey

    Sour Cherry porter w/ goodbelly. Used WLP066,S33 and some Chinook. Took a day but the 1yr old yeast came to life.Used a foot warmer to heat the kettle.

    If they're fresh, I'd recommend freezing and thawing before using in secondary. It breaks down the cell structures and makes the insides more accessible to the beer/yeast.

    I've always been happy using the frozen fruit from the grocery store. It's easy and much cheaper.

    Colorado isnt the spot for berries. I tried. My hops are out of control again though.

    Yep, been to CO, seen back yard hops 30 feet high and more cones than I would get on 3 plants of the same variety.

    From Wort Souring - Milk The Funk Wiki. Growth of US-05 was 82% at a pH of 3.51, and 53% at a pH of 3.17. Explains why you should double the yeast per 5 gals.

    Briess Synergy Pils
    2% Carahell
    4% Acidulated
    Wyeast Rocky Mountain Lager
    Northern Brewer/Perle for IBUs
    American Noble Cascade @10
    1.045/1.008 hopefully
