    Hello folks,
    Water is my biggest issue these days. I am adjusting strike water to 5.5 pH +/-, but want to verify mash pH. Everything I've read tells me to check pH at room temperature. Who has a quick way to bring my sample down from 150 +/- to 70 +/-? I tried putting my sample container in ice water, but it is still very slow. Meanwhile, time is ticking away on my mash. Thoughts? Thanks!

    Put ice in a ziplock bag and the wort sample in a glass shot glass. Hold the shot glass with the ice baggie wrapped around it and swirl the sample around the glass while blowing on it. 90 seconds is about all it takes. My wife thinks I look like an idiot, especially while I do that.

    To be fair, I’ve had Jell-O shots out of plastic ones.

    Had a Pride and Joy last night that had to be infected, it tasted ridiculously awful. I had one sip and poured it out. Haven't ever had that problem with Three Floyds before.

    I guess I'll say that I had a can of Phase One yesterday and really enjoyed it, great flavor for a PA.

    So I think P3 hit lightning in a bottle again with Linear Gradient. By far the best hazy I’ve had from them. By the description, it sounds like they adjusted the process and water profile from past DIPAs. I feel like every time I enjoy one, they put out a turd the following week. Let’s hope this sets the trend in consistency, because it’s fantastic.

    I’m sure the brewers are taking notes and adapting with each brew. New systems take time to dial in.
