It’s been a busy couple of brew days. Kegged my kveik yesterday and decided to brew up kolsch 100% pils, willamette cause it’s the closest I had, and lalbrew kolsch yeast that I hve never used before.

After running out of CO2 just before the July 4th weekend (:astonished:) I restocked yesterday. My Munich dunkel is basically done, but d-resting before I crash it. Meanwhile the Suarez Kinda Classic Saison clone took its place in the fridge and is also crashing before I keg it. Might keg prime for the first time? Not sure yet.

Italian pils is carbed up and tasting lovely, but needs some time (and maybe some more gelatin) to clarify.

Anyone try the new Verdant IPA yeast from Lallemand? Apparently it is dried London Ale III. My homebrew store gets it in 2 weeks so I’m very excited to try it.

Would love to hear feedback from anyone who gets their hands on it.

I’ll be buying it as soon as it comes in. I may be getting it before many as I also had opportunity to get philly sour rather quick. My homebrew store is very active in trying new things.

Have you had a chance to use the philly sour yet?

I have ordered it and am picking some up from the store tomorrow. I plan on brewing up a sour pale ale. I’ll report back.

What is your dunkel recipe and process? Not sure if I saw that. I’m skipping a marzen this year to make a dunkel in the next 2 weeks. Thanks!

I was going to do a decoction and then ran across enough posts saying it was a waste of time that I decided to just do a step mash and be done with it.

Recipe is here. Feel free to DM me if you've got any questions!

Ordered ingredients for the first time in about a year. Going to try Crisp german pils malt from their hamburg maltings. Also got a bit of chevalier to try in a beer. Bought lots of k97 for some reason, thinking it was good now realised that I was thinking of bry-97 instead. Oops.

I personally like k97 more than bry97. Just takes forever to clear.

Yeah I've been googling it a fair bit, have seen that it is slow to clear.. Will try it out anyway though, I've been interested in trying it before..

I really like bry97, some people don't like the slow start of it though.

K-97 is great. I use it in Kolsches and kettle sours.

I’m not a fan. To me it does nothing as well as US05

    Is k 97 the same as bry 97 ?

K97 is “German Ale Yeast” by Fermentis and Bry-97 is an “American Ale yeast” by Lallemand.
